Longtime family recipe in my family is what we call "pasta gravy". It's essentially this, but we also put hot and sweet Italian sausage in as well (sometimes with toothpicks in the pieces to tell them apart, though we invariably forget which is which anyway). We always have the sauce on pasta with the meat on the side. In fact, for as long as I can remember our Christmas dinner has started with my grandmother's manicotti, gravy, and gravy meat.
Um...if you wanted to lower the carb content, you would eliminate the BREAD CRUMBS. There aren't many raisins and they add a lot of moisture and sweetness to the meatballs. The best chefs balance flavors of sweet and savory. That's why we add a pinch of salt to chocolate chip cookies and many people add sugar to their tomato sauce to offset the acidity.

Pulpetta A La Nonna...Grandmother's style meatballs? Looks SO GOOD! I've heard of using raisins in meatballs to add natural sweetness. I would serve this with a nice slice of crusty Italian bread, sliced and lightly toasted in the oven to dip in the sauce!
I was thinking that the pine nuts should have at least been lightly chopped. I happen to love raisin in savory dishes. If you don't like the texture, sure...rehydrate them in hot water, then dices them into tiny bits so they will essentially 'dissolve' into the meatball, adding only the sweetness.
I don’t live in Italy, so I figure the food police probably won’t show up at my door when I eat spaghetti and meatballs. That said, there are plenty of carbs in meatballs, so it’s not like they need more.
