Sticky Jollof Ribs

    Ingredients:
    2 racks of ribs ~ 4 lbs
    1 jar Jollof Now
    1/4 cup honey
    1/4 cup soy sauce
    1/3 cup vinegar
    3 tbspn stock powder (bouillon)
    Instructions:
    Prepare ribs by removing silver skin, all visible fat and cutting them into individual ribs
    In a bowl, combine all left over ingredients to form a marinade.
    Pour the marinade over the ribs and combine. Set in the fridge to marinate for 4 hours or overnight
    Preheat oven to 350F
    Place ribs into an oven safe pot (save excess marinade) and cook with closed lid for 2 hours.
    Remove the lid and excess fat / liquid from pot. Increase temperature to 400°F (200°C).
    Brush the ribs with some of the saved marinade sauce and bake for an additional 15 minutes or until the ribs are sticky and caramelized.
    Garish and enjoy
