Fish and chips so crispy that Your neighbour will hear You eating

Hello Everyone!
Today we will make fish and chips!
It is a dish based on Heston Bluhmental recipe. the batter is unbelievable crispy and looks like from the other world.
I also made a brine for fish. It is extremely important in this recipe. It gives additional flavour to it but also it gives incredible texture of it.
Brine:
200g of salt
200g of sugar
orange zest from 2 oranges
1 liter of water
Batter:
20g of flour
20g of potato/corn starch
30g of cold vodka
30g of cold beer
1g of baking soda
pinch of salt
