If you try to sing it at a slower tempo, you may run out of breath (you can find the lyrics in Wikipedia or other places.) Also note, the piece is about JOY. This was how she felt she should play it to reflect its choral nature and express joy.

I can see the justification for the faster tempo, in terms of this being a cantata - sung. But it's a good bit faster than Myra Hess played her own transcription. There is more than one recording of Hess herself on RUclips.
Agreed, tempo is too fast. "Joy of Man's Desiring", is expression of someone who has entered into God's rest. The person concerned has learnt his lessons and has matured. There is no anxiety, worry or fear, because he is in the presence of God Yahweh Abba. The tempo therefore ought to be slower. No hurry. Imagine a pastoral scene. (e.g Psalm 23).

But within this limitation it is wonderfully played, and the more female touch and expression are closer to Myra Hess than those of a male player, how excellent it may be played. She is a great talent.
Piano tempo should not be something mechanical. And followed by numbers. Do not understand why some pianists think fast tempos sound good. Beautiful music does not stick to tempos, but feelings.
