    Very nice episode and you picked some of my favorite dishes. We lived for many years in Fukuoka and I know the town very well. We lived behind the Ichiran ramen HQ in Nakasu where the fans come out... the smell from pork bones cooking for 24 hours is not very nice. But the ramen is good! Small gyozas are the best and grilled tongue is delicious. Yam or mountain potato is also very good, I used to make gratins with these, mixed with some normal potato and bonito flakes on top. It is very popular in izakayas. Mentaiko originated in Korea as a salted version as you say, but Fukuoka made it spicy with chili. A tip is to buy broken mentaiko at a third of the price if you are going to eat it the same evening. For a gift ofc it has to be whole. Motsu nabe is great. Most international recipes calls for cooking the tripes for 3-4 hours. In Fukuoka you can get it cooked in 15 minutes on the desk or table in a mild broth and with white cabbage. But there is a lot of time spent cutting and cleaning it beforehand. It is very good. Yanagawa is nice for eel, but you can also get it in Fukuoka city. There is/was a very good place on the 8th or 9th floor in Hakata Station. Yes, the yatais in Nakasu towards Canal City are nice, some have great seafood, big shells etc. There are also yatais round Tenjin station and some on Showa-Dori. Two advices to visitors: Nakasu is sometimes described as a red light district by ignorant people on the Internet. It is not. It is perfectly safe at any hour. Second, do not worry about about eating and drinking at yatais, there are free public restrooms very close by and they are just as clean as any in fine hotels. In the colder seasons I recommend a trip by the suburb train to Itoshima and eat grilled oysters and seafood in the tents on the quais. Yes, food is outstanding in Fukuoka, many actors, comedians and others relocate to Fukuoka from Tokyo because of lower prices and the food. A great combination visit is to stay in Fukuoka some time, then take the Beetle boat to the beautiful city of Busan in Korea, it takes 4 hours. Busan is cheap and they also have great food. Arigato!
