It took years of convincing my dad to try heart. Well, last night he shot a buck. He used the Meat Eater tutorial video on how to clean the heart and then cooked with this recipe. He loved it! He’s now 66 years old and said “all those hearts I left in the woods….”
You could say he didn’t have the HEART for it!
I talked my buddy into eating the heart at camp and he said the same thing lol.
heart does suck with most preparations though.

bunch of the old hunters were telling me not to cook the heart. "Weve tried. it was terrible." I served it up and the plate was empty in no time. Everyone was blown away.

@@bobdole1977 ahh, I use a light roast coffee for my rubs, less bitter flavor. I love dark roast coffee by itself but not in food.
A friend gave my husband a deer heart and liver from a kill he made yesterday... hubby is cooking this heart recipe AS I TYPE! I can't wait! And thanks to one of your videos, I prepped the heart. First time, and you made it easy. Thank you!
How did it turn out?
After getting a deer, on the evening I'm processing the primals into cuts for freezing, I'll cook up the heart to snack on as I go. Love the taste! Will have to try this rub recipe next time!
What does deer heart taste like? I’m not talking about recipes, seasonings, and different ways to cook. I can take care of that. I mean pure taste along with texture. I imagine a deer heart texture would be very chewy and juicy. What about liver? I imagine the texture of liver would be soft and smooth like jello but become gritty as you chew...

@@HarleyQuinn_93 The heart has a mild venison taste (not gamey) and as long as you don't cook it 'well done' has a texture similar to a steak. Not overly chewy at all.
I'm not a fan of deer liver... High mineral/iron/blood flavor (which makes sense, but isn't that great to eat). Could be the way I'm preparing it.

We do this with Tennessee honey whiskey. As a side we also add the whiskey butter to some sweet corn with season salt. So good
I wilted some greens after pouring off the sauce, awesome! Blows my mind people leave this cut in the gut pile.
We’ve always brined the heart in the fridge overnight, then cut it into pieces and cooked it on the grill as kebabs with onion, bell pepper and cherry tomato.
But we’ve got three whitetail hearts in the fridge right now and can’t wait to try this recipe tomorrow night.

Based on my post 1 year ago. I finally tried this recipe. I slightly overcooked and learned the difference between butter and margarine spread. My sauce was a soup. But just experience to try again. Was still good.

It’s good I just tried it. Had mule deer heart harvested this past winter. I used wild turkey. Simple I will have to cook it up at camp this year.
I have a plate of this infront of me as I write. Best recipe ever. And over the years I've eaten a lot of heart. Like I wrote, this is the best.

For a long time, I left the heart in many a gut pile in the woods, but I decided to start keeping the heart several years ago. Always carry a small plastic bag to rescue it for the skillet. It is amazingly tender and not real gamey in flavor. It's the first thing I eat on the deer. I actually simmer it in butter in a covered skillet on low heat. I dip it in steak sauce, ketchup, or ranch dressing.

Fresh venison heart, and liver, are two of the best things in a deer camp I know.

Love this recipe, hoping I can use it to show my wife and sister inlaw how good heart really is
So this last deer. I gave the liver a better go. Prepared cleaned and stored soaking in milk the night..I made a beautiful sofrito with it. And it was edible but not amazing. Especially for the effort. Managed to eat half a liver, chickens loved it though. And the heart cleaned and then quick marinade soy sauce rosemary oregano. Still amazing for the effort. Gonna try this next time.

Very good execution on the pan sauce. I would get the cast iron ripping hot and remove from direct heat as soon as I put the meat in the pan. Perfect sear and color, but not overcooked. So sorry your heart was cut in 2 pieces. 😭😂 1:03

Try not to pour bottles of alcohol directly into open-flame cooking. This is very important if you're doing this recipe at home over your stove. It's a very easy way to get hurt
Pouring a whiskey bottle into a hot pan over an open flame is a major fire hazard. If you miss the pan, you can cause a large alcohol fire, which can easily spread to the bottle in your hand. PLEASE PLEASE PLEASE pour alcohol into containers before pouring into cooking vessels when working with open flames.

Used to go on heart hunts on opening day when I lived in Michigan. Around 11 to noon, just drive around and look for where deer have been drug out and go back to the gut pile. The hearts are left just about every time.

I use pie shine for pork chops. Its amazing with some thanksgiving dayish stuffing with craisins in it.

Us hmong folks just butterfly the heart salt it cook it brifely over the fire and then dip it in thai pepper and fish sauce, best ever
If you want a really nice sear, dry your meat off before throwing it in the pan and use a super conservative amount of oil... best of you have a well seasoned pan and don’t need any oil.
What would one substitute coffee with to do a similar recipe if you don't like coffee?
