Those do look good! Peppers and onions are some of my favorites, I'm thinking green onions, parsley would work also, or carrott and zucchini, wow this is a great recipe! Bet you could do a sweet version with fruit ?!
Do you make a sauce for dipping? Maybe a yogurt/sour cream with herbs or a sweet n sour, hmm, you've got me thinking...
