BEEF MARINADE
1.5 lbs beef, cubed
1.5 TBSP low sodium soy sauce
3 cloves minced garlic
LOMO SALTADO SAUCE
6 TBSP low sodium soy sauce
1.5 TBSP red vinegar
1.5 TBSP oyster sauce
2 tsp corn starch
ADDITIONAL INGREDIENTS
1 purple onion, cut into large chunks
8 cloves garlic, minced
5-6 roma tomatoes, quartered and de-seeded
French fries, cooked
1. Cut beef into cubes and marinate with 1.5 TBSP low sodium soy sauce and 3 cloves minced garlic. Set this aside and prep the rest of your ingredients
2. Prepare your purple onions, roma tomatoes, garlic and mix all of your ingredients listed under LOMO SALTADO SAUCE.
3. When everything is prepared, cook your marinated beef. I cooked it for 1 minute on each side (only for 2 of the side) - use high heat. Remove from heat and set aside.
4. In the same skillet or new one (I used a new one cause the original pan I used was too small), heat up some oil and cook purple onion for 1 minute.
5. Then add 8 cloves minced garlic and cook for another minute.
6. Then add your beef back in along with your cooked French fries and lomo saltado sauce. Give this a little mix before adding your tomatoes. Cook for another 30 seconds and then turn off heat. (Note: I like to add a dash of sugar to mine but you dont have too).
7. I like to eat this with rice =)

some tips: no cornstarch, no sugar, in the original recipe, but also next time add each wet ingredient to the pan one by one to a super duper hott flaming wok. So sear meat then set aside, add red onion, tomato, then reincorporate the beef, then add soy sauce then red wine vinegar, also add some green scallions. then add your fries, toss and top off with a pinch of parsley or culantro. original dish also always calls for fresh aji Amarillo cut into strips, but if you're using the paste you can just use the paste to marinate your meat in the beginning. looks good! and as a Peruvian i approve the way you say Lomo Saltado! and i'm glad you enjoy our food :)

My spouse is Peruvian and this is his all time favorite meal. I learned multiple dishes from his grandmother before she passed. This isn’t bad at all. I recommend trying a little cumin in the marinade!

When you cut onions, cut it next to a small fire source. So for example, turn on ur stove and put it on low and cut the onions right next to it. The fire will burn all the chemicals that cause you to cry. Try this next time and you’ll never cry while cutting onions again unless you’re feeling sad that day. you’re welcome chị

My dad's favorite Peruvian dish! I grew up eating tons of homemade Peruvian food and this was one my mom made. She hasn't made it the last few years due to my dad needing to be health conscious, so I don't remember how it's made. 😂

I AM SO SORRY. YT IS HORRIBLE with letting me know about comments. They sometimes disappear from my notifs. To answer, my dad is borderline diabetic (but not quite.) And has other health issues so over the last 2 years, the doctor advised he needs to be on a stricter diet cutting out anything high in sugar, carbs and fat but he still needs to eat protein and veggies. He also has high blood pressure so it will spike if he eats anything too salty or too loaded in carbs.

I love eating and cooking lomo saltado, it's hard to come by Aji Amarillo here in the US but I add some blended mini sweet peppers and a hot chili and it sort of works. You should try making Aji de Gallina delicious!

Great fun to watch, but as for the recipe it is a waste of ribeye steak, especially as your cut looked to be of good quality. It all went down the pan (excuse the pun 😅) when cooked frozen chips were added. Raw onions, cold skin on tomatoes at the end of the dish was simply too much to bear 😆😂😂

as a Peruvian i can tell you it definitely does, though some people may not include it cause it's too much of a hassle and it's quicker to cook without it, the staple/original dish most definitely includes papas every single time or my Incan ancestors will roll in their graves! we don't play about our food, us Peruvians are snobs about their recipes in the best way :)
