How many months out of the year is that really a problem? I am in Michigan, so maybe 5 out of 12 months freezing would actually be a problem. The rest of the time, it makes life easier. Talking from experience here...
I used to raise rabbits, lost most of my herd a couple times because of disease and I had them all together, after the second time I went to individual cages for them. Just wondering if you have had any problems with that? I'm in AK so is wet here , had to cover all outdoor pens because it was just a mud bath if not.
We are in Louisiana so it’s wet here too. We have never lost a herd. We have raised in both cages and colonies. The cages produce higher yields but the colony is far easier and a better quality of life for them. It’s so hot here, it’s nice for them to have the option to go underground on really hot days
They can smell the water they will search it out and figure it out. You can put a small bowl of water right under it at first to draw their attention to it if you need too. But mine were trying to drink from them before the water was even flowing yet

My daughter's rabbits reached right through the bars to cut the cables on their headed water bowls
Put some rat wire
Will the chickens drink from those ?
Yes they take a little longer to learn to than the rabbits do, but they will. Especially if you leave on dripping

Watch this carefully. The clear hose is going to grow algae which will clog your nipples.
The Apple cider vinegar will help to prevent that and it very easy to pull a piece of hosing off and clean it or replace it if needed.
