    using onion juice will also tenderize the meat. In middle east they blend a onion, put it in a cheese cloth and squeezes out the onion juice. Then use onion juice as a tenderizer.

      MrQuagmire26 That makes a lot of sense. Enzymes can tenderize meat. :D I really like the idea of using a cloth to obtain the juice. Thanks!

    In the Greek version of tzatziki there's always garlic and instead of mint we use dill and add a bit of olive oil when serving it. I also press the grated cucumber to get rid of the water.

      Marie-Thomazia PanayotisAnd if you want to make a gyro on a smaller scale, you can make souvlakia (smaller skewers with either chicken, lamb or pork) with tzatziki, salad, tomatoes, a few chips, all wrapped in a pita.

      Marie-Thomazia Panayotis Exactly!!! My ex-brother-in-law was from Greece, and he always put garlic into tzatziki. Of course, he also used a combo of dill and mint, and added a squeeze of lemon to it as well. But either way, there should always be garlic.

      +Marie Pnyts Came to the comments just to see what Greeks had to say about tzatziki. 'Cause in Sweden there is garlic in it and I was confused for a while during the video and wondered if that was something we had made up or not. :)

      ***** try a mediterranian couscous-salad:
      simply add equal parts of boiling water to couscous, chop red onions,OLIVES(black ones work better imo), tomato, cucumber and crumble some feta cheese. mix it all and as vinegraite use olive oil and some lemonjuice/whitewhineviengar with black pepper and seasalt

    Oh man, I just have to say, your channel is seriously food goals for me. Despite being 23 already, I cooked very little up until January. I'm living on my own now, and have been since August, and by January I had had it with takeout and pasta with jarred sauces, so I decided to teach myself how to cook. Still working on it, but your channel is totally helping inspiration-wise!

    In Turkey we make CACIK (tzatziki) just with some Turkish yogurt, minced garlic, grated cucumber, salt and (optionally) dried mint or dill. It's reaaaallly reeaally delicious and soo refreshing to have with some kind of grilled meat in the summer time. Highly recommend.

      Ooh and add just a couple ice cubes into each bowl of cacik (and maaaybe a lil drizzle of extra virgin olive oil?) right before serving and it's just... Oh my. PURE. DELICIOUSNESS.

    For the cucumber in the tzatziki, I usually grate it and then put it on a plate, and salt it to get rid of the water, squeeze the water out and then add the rest.

    I worked in a restaurant with a Greek owner (not a Greek restaurant, though, American-style food) who would make tzatziki and he would tie the grated cucumber up in a clean tea towel and swing it over his head to get all the moisture out before mixing it with the yogurt, etc. Effective, if not exactly to food safety standards. ;)

    interesting, first off I've never heard of take out kebobs, here growing up my mom always made beef or chicken kebobs on the metal skewers with tomato, green or red bell pepper, onions, zucchini and mushrooms. Then just served on a bed of rice with a salad. The cooked veg made the dish as far as I was always concerned. Yum.. might have to try it again here for the kids.

      Tracy Tureson Presumably you live in the US...mediterranean and indian food is much more popular in the UK than in most US cities. In the UK it's very typical for take out or even late night, post-pub grub.

    You can grate the whole cucumber (yes the core of it as well), just squeeze out the extra water before adding the yoghurt!

    I like to add a bit of sumac to the marinade. Works well with tzatziki. Bit of pickled turnip in it or on the side is amazing too.

    Just tried this the other night using greek yogurt... delicious! My tzatziki sauce came out quite watery however, even though I avoided the core of the cucumber when grating it.

      Something I've learned about making tzatziki is to drain the excess liquid of the yoghurt and the cucumber using a coffee filter. (put the cucumber/yoghurt in the paper, squeeze so the liquid comes out, scoop out and use.)

    Little tip for marinating: put everything in a plastic bag, like a zip lock bag. This way barry's hands stay clean and you can really massage the marinate into your meat evenly.
    And please say tzaziki like in tsar (the old russian emperor)

    I would really recommend using flat bread with some fresh mint, rucola, red unions and some of that tzatziki.

    try my recipe: mix saffron, yogurt, lemon juice, red pepper and salt together and then mix it all with chicken,put it in the fridge the night before and the next day cook it BBQ style or in the oven. Don't forget to grill some tomatoes as well. trust me it will taste amazing.

    this is exactly the way we cook kebap and also the tzatziki(we call it ''cacık''), but i recommend you to add thyme in to the spice mix next time, you will see the difference and also its kind of tradition to use thyme when it comes to chicken in Turkey.

    Fun fact: tzatziki ALWAYS has garlic in it, at least in the German-Greek version... no mint though.
    I only learnt to appreciate the minty version when I moved to the UK, but sometimes i'm still left confused and a bit disappointed... although, as someone who has to watch out for too much garlic, it's a lot easier now :D

    Here in Concepción, Chile, there's a restaurant called "Ala Turca".... It's just like the one you did.... and they make the tortilla for serving it... The best lunch!

    Turkish cuisine!? Love this. There are limitless types of kebabs. I hope to see more of these recipes! I challenge you to try making Cağ kebab. It is similar to doner kebab, but instead of spinning vertically, it spins horizontally over a wood grill. It was by far the best type of kebab I have ever had.

    A tip for the cucumber.
    Cut it in half and scoop out the seeds with a spoon before grating it.

    This recipe looks very delicious although as a tzatziki lover i have to add that mint is optional but you forgot vinigar, yes vinigar gives a great taste to it ( just a tablespoon or two) ! Also try to make it the day before and let it in the fridge, don't know why but it's even tastier the day after!

    It's called tzatziki (τζατζίκι)....and it is a greek dipping sauce made with greek yogurt, finely chopped garlic, grated cucumber, extra virgin olive oil and a pinch of salt. Everyone that has eaten, at least once, a gyros pita in Greece, knows what tzatziki is...!!!!

    Tried to cook this just now. It came out lovely. But I may suggest that the amount of lemon needed to be reduced by 3/4 or 1/2 a lemon as the chicken is a tad too sour. :) Aside that delicious 😋

    The authentic Greek tzatziki does have garlic in it and also there's no mint involved, mostly dill...

    though this is really different than the "tavuk(chicken) döner" we have here in turkey, it is really a good take on it :) looks delicious. also whats that bread you are using? i like the texture of it

      Joe Florentin it's probably fokatsia bread.italian bread made from pizza dow and olive oil.

    I usually have a variety of beef and chicken on my kebabs. I always have tabouli, onion, lettuce, tomatoes, cheese, my meets, extra tomato and garlic sauce on my kebabs. Now I want one😂

    I don't know if you already know this, but the "Ö" in "Döner" is actualy pronounced like the "O" in "work"... That goes for German as well as Turkish (as far as I know). Some people go as far as writing "wörk" as a joke. Hope I could help :)

    just use the center of the cuecumber aswell, grate it onto some paper and just press out the liquid.... my old boss used to do that, and he won 3 olympic medals in cooking

    I'd serve it with a Tahini sauce. Dilute the tahini with some water and add some garlic powder, salt and lemon juice.

      Gemma Clark, you can replace almost any dairy product with plant milk or coconut cream. Cheese is a bit harder but if it's cooked into the dish ground cashews are a good option.

    Also, a common misconception is pronouncing gyro as you see it (like guy-ro). It is actually pronounced like yee-ro. In Greece we don't have doner but gyro :)

    Can this be cooked in a closed Microwave oven?
    I see that there is an foil put at the bottom. If i put that in a closed microwave oven then wont it catch fire?

    Just to inform you, as a Greek person that I am, tzatziki sauce includes garlic as well. That's how it is traditionally made.
