  • This is one of my favorite Soups. I love Mondongo as a soup or as a stew. Basically as a stew you can make it the same way just dont add so many root vegetables. Then let it reduce for the stew. But for the soup you want to keep it like the video. Remember in this video before adding the vegetables and spices make sure you have enough water. 8 1/2 Cups of water.     My mom developed Dementia and doesn't remember how to cook and I come here when I need help with all these old school dishes..mondongo, patita cerdo etc...( the one's I didn't pay too much attention to growing up) so I can make 'em for my dad. Thanks for all your help. You're so cool n down to earth, like I can see us all hanging out in the kitchen😆

    Cubans call that Panza and we make it with Chick Peas and some times with cow or pigs feet. They also call it Pata y Panza. Its loaded with Collagen and super nutritious. Awesome recipe brother.

    My Ex's grandma always made this .. they had it a lot in Italy when she was a kid .... not my thing but nice vid and I love learning about the Spanish spices and root veggies.

    I think if u invested in a pressure cooker it would cut ur cooking time in half & the tripe would b extremely soft in 45min 🤷‍♀️Just a suggestion ⁉️

      Pressure cooker is good in a pinch but affects the texture of meats.

    I get this all the time at Tu Casa Restaurant here in orlando and it is fantastic but they do it straight up without the extras. Im dying to try your version cuz it looks more hearty. Thats the way i love my soups/ stews. Also imma cook the tripe in a pressure cooker to save time

    Hey i love ur vdeos. Im dominican and we make mondongo all the time. Question why u leave it cut so big i cut it smallers peaces. We also add paticas de cerdo and we call it patimongo. Try it ur love it.

    For us, that actually have lived so many years in the island, there are sooo many things you add, that are not like we do it: starting with "jalapeños" and finishing with that really red powder. Neither the green peas. But hey, I guess you modified it to fit the other cultures. Remember this: authentic puertorican food in PR, "never" gets modified to please other cultures. We have a unique flavor. Anywho, congrats, there are many of your recipes that honor the boricua flavors. 💙❤🤍

    Thank you for your video. I love mondongo too, and it's my favorite stew mother used to cook. I also cook it, but I used to just throw everything in the pot. Today I used a little tripe, and used beef chunks. My mom always used racaito to all her dishes, including this one, but I am guessing that the sofrito here includes that? Where I live now, recao is hard to come by unless you go to suopermarkets that sell it. I've seen it sold in some stores. I look forward to ordering some pasteles from you!     I cook mine in a slow cooker on low/medium at about midnight🤣😂...by morning it is tender.
    Before the low cooker I cut it up...boiled it for about half hour...then I drain it.... then when I place it in slow cooker I add the seasonings.
    No veggies in slow cooker overnight🤦🏽‍♀️🤣
    In the morning it’s ready.

    Tripe is delicious but it has a strong smell but if u soak it in vinegar for 1/2 hour and believe me it will not smell at all and it will not taste like tripe it has a good taste I make it also with beef chunk and potatoes

    The heats in the veins not seed. If you want you can remove veins for less heat. Also bijol is super bad for you (yellow number 5). Use annato or new mexico red chili powder.

      My Half Filipino husband just suggested ham hocks as i am right now making my first Mondongo. Of course being from Sierra Leone, I'm gonna 'Africanize' it by adding scotch bonnet pepper, lol!

    Soak it in lemon and vinegar over night in the refrigerator and rinse it in the morning and it will not smell as much.

    No me acuerdo si se llama igual, pero mi abuela cocinaba el mondongo con patitas de cerdo juntas. Ella tenia una olla de presion bien grande, y ella lo ponia todo junto para ablandar lo. Despues lo transferia a una olla bien grande para hacer el guiso.

      Mi abuelo hacia el mejor, también en olla de presión. Cuando alguien dice que no le gusta pienso que es porque no han tratado el de mi abuelo. Una pregunta si alguien sabe, yo no sabía que que era o sopa o guiso, alguien sabe la diferencia? Y cuales son los ingredientes yo solo me acuerdo que el le hechaba calabaza, maíz entero, creo que garbanzo y quizás papas

    Holding my Freakin Rican coffee cup up to you...lol...Buen provecho mijo. Go ahead and dog that thing up, hahahaha. Wow, my father used to make this and add pig feet, it was always a party on Sundays when all the family would gather and the music be blasting and the kids be running wild. I would be filling up coffee cups with boiled milk for café con leche. Thanks for bringing back great memories. Gonna gather up my ingredients to make this on a Sunday at my house for the family and now grandchildren. God bless you.

    I love ALL your videos :) I visit your videos every time I feel bold enough to make an OLD SCHOOL dish as this one because I never paid enough attention to my mom when she would make it. ME... I was the one who ate ALL the Spanish dishes but never actually learned to make them. Well, not really but for these dishes, yea I just wanted to eat them instead lol. ANY HOW... Today I am REALLY going to attempt to make it. I have a sick Aunt (due to covid) the after affects :( and she loves this soup, me too and well I am going to try my best to make this and hope and pray that it comes out scrumptious lol. I will come back and give an update heheheh.

    Pa la sopa de mondongo en Honduras, le agregamos pata de vaca pa darle sabor al caldo. To make the soup a bit sweet, add sweet corn and to thicken it up to make it creamy grate a chunk o platano or add a tbsp of all purpose flower. Enjoy with arroz, limon y tabasco.
