  • Today I decided I'm going to try an upgraded Nigerian corned beef stew recipe. Nigerian corned beef stew is relatively simple. Basically just corned beef from a can added to the red pepper stew.
    This upgrade was going to a twelve-day journey of curing beef brisket myself in brine for 10 days and then cooking the beef sous vide for 2 days to get the best darn tasting corned beef possible to use in the stew.
    Of course, I cooked up a traditional corned beef stew for comparison with some surprising results.
