Is it safe to uninstall EasyCBD or my PC will just not boot ever again?

You can uninstall EasyBCD after solving your problem. This will not affect boot manager or boot settings.

I allyae I accidentally deleted it and now it doesn't start anymore because there is no entry in the manager

A simple solution is to use a Windows DVD or Bootable USB with the same windows. Otherwise I am working on a solution, so that you can solve this issue with any installation media like Windows, etc.
