We have had this for a couple years and never used…now i rediscovered and am using to sharpen my kitchen knives..thanks so much…already my chefs knife much better, but will continue to hone. I had no idea how to use, so thank you. Especially how you held in your palm. Very helpful. Btw, we sailors too! Glad i found you!

Great video, I bought one for Christmas break thinking I would surprise my lovely wife/chef. You make it look easy! The movement took a little practice but, I was able to sharpen her favorite knife, it was really dull. Thanks, love the content.

I bought a Lansky set more than 30 years ago, and it's always worked for me.
That hasn't stopped me from buying every new "improved" sharpening system that's come out since.
The Lansky still works and I still use it, but buying new toys is half the fun, even if you don't really use them.

I have been sharpening knives for years and it's a skill that takes time to learn, but that's the best system I have ever seen for knife sharpening; I think anyone can become a pro with that setup.
Great video. That’s the exact same sharpener that I use. I will use the extra course when changing the angle, but otherwise yes, I only really use the middle stones. Totally changed my sharpening skills. The only different thing I do I is when determine what a knifes existing angle is I’ll use a sharpie on the blade. That way I can tell almost immediately if I’ve the angle correct. On my chef’s knife, I’ll use my grandfather’s sharpening steel to prolong the time between sharpening.
I guess I do use the extra course when the blade has nicks.
Sad to say that happens more lately.
Clark, you went from a coarse stone to a fine stone without checking for a burr to know if you apex the blade. You start with the coarse stone to reshape the blade´s edge and only when you produce the burr (you can feel it with your fingertip) switch to the other side to turn said burr to the other side, that moment you know you have reached the apex of the blade's edge, then you move to finer grits to create smoother slopes and at the very end trying to remove the burr with soft passes of the finer stone and also using a leather strop to refine that sharp edge. The concept of the burr sometimes scape comprehension. I hope I have helped you to figure it out.

Clark, here is an update on my new Lansky. After my order, it was just a few days to receive. Learning curve was two hours, hand-holding the knife clamp. The cover showed a person hand-holding the knife clamp, so that is what I did. I also used the 20º slot as that is what the instructions say to use for kitchen knives. Started with red, then green, then blue stone handles. Honing was not too good, I used a broccoli stack to test. I then resharpened knives using 25º slot. Much better, but not quite what I was expecting or wanted. I put the kit away. After awhile I reread the instructions, and attached a small piece of angle iron to a jig I made for a honing stone that never worked for me in the past. I clamped the knife clamp to the angle iron, than re-honed my 7" & 5" chef knives, and 1 non-serated steak knife. The edges were clearly different than the rest of the blades. I used the 7" to cut a potato and it felt really nice. The real test is how the knives will cut a tomato.I'll try that next time I go to the store and get a nice tomato. So far, so good. And I only stabbed myself once, piercing the first layer of skin only, but over a vein on the back of my hand. Yes, it was a happy ending on the kitchen counter. Best, :¬) Webhead USA
Glad it is working for you. The delayed success might been because changing the sharpening angle to a lower position requires you to remove a lot of metal before the stone can actually work on the edge.
A viewer suggested marking the edge with a sharpie first so it's apparent when you are removing metal all the way to the edge.
Love to know you use the Lanskey system. I have used that system for over 30 years now. It is a great system.

STROPPING should ALWAYS be done.
Especially on any knife used for food preparation, The honed edge ''feather'' that has been ground from each side of the blade is almost invisible. It will break off while cutting that first piece of flesh or vegetation. Subsequently embedded in the food and then on into the Internal Digestive Tract. This sliver will continue to cut you from the insides. Use an old leather belt to backstroke the blade until it falls off. When your blade easily slices through a piece of newsprint without snagging you're done. (I noticed the Lansky sharpeners sell separately a Leather Stropping Hone) (Too small for my liking though)

Also noticed your copy of "A Sea of Words" on the shelf. Patrick O'Brian is another thing I love, even more than sharpening knives. I've always thought it would be cool to read him while on a boat in the middle of the ocean.

The idea of knives with edges that only last a few weeks & knives being replaced when blunt is most disheartening. The Lanskey sharpener looks excellent. Thanks for the info.

Clark I just thought of an invention for you.. once I made a transducer for this really old smart engineering guy that had a gov contract to measure power of jet engines.. how bout one that can measure the force put on rigging lines or roped lines.. Hope you haven't cut off your finger yet.. you take care you two. ... If you do go exploring on land be very wise where the bears and dangerous animals may be... And I'm not talking bout snails.

The cheap diamond kit with a tapered needle for the serrated blades is compact.
The amount of sailors that can't sharpen their blades amazes me.
This has lived on Temptress for over 30 years and many thousands of sea miles. Still in perfect shape.
Probably close to the number that haven't learned to splice yet.
I bought the same lansky sharpener a few months ago, but I still couldnt get my knife sharp. Not sure what im doing wrong, but you have shown me that it does work. Just have to keep trying
If you are using a different angle then the knife was originally sharpened at you might need more time.
A viewer suggested marking the edge with a sharpie so you can see your progress. I think that's a great idea.
Work the first stone until the ink is gone off the sharp edge.
If you want it to work a little better drag the stone in the opposite direction and debur the edge on a strop when you are done (old leather belt works quite well).

Hi Clark, I just happened to replace my LANSKY Sharpening Kit from Amazon. I have used LANSKY for years. This one I just purchased is a piece of junk. I sharpened 6 (six) pocket knives and the fine stone is worn down. Have you had that problem? My last set never wore out, I just misplaced it. Great video by the way.

I'll be extra careful with my old one. But I now feel bad I recommended this to others.

I've seen lansky stones for serrated blades. Basically same thing but round.

Spyderco SharpMaker for all my knives, similar to this product but safer and easier.
A good knife you can sharpen! Those knives you see on tv that never need to be sharpen, you cannot put an edge back on it.

You were lucky. Please use this device with extra caution and avoid using it on boats. Wearing cut resistant gloves is advised if you have to use it. Imagine if your hand slips, you could say goodbye to your fingers. Does it show number (grit) on the grinding stones? A good sharpener always show grits of grinding stone, instead of descriptions like extra coarse. You put way too much pressure on the stone. Let the stone does the job. Too much pressure makes the knife dull and dangerous. Most importantly, for safety and proper sharpening, don't sharpen against the blade.
Seriously dude! The guy sails his boat across oceans and you are whining he could get cut sharpening a knife while sitting at a table.
I think you have to manage your understanding of risk.

The Lansky was my first fixed geometry sharpening system and I still use it occasionally with a jig I made to sharpen scissors. It's ideal for home use but as I've started doing sharpening as a side hustle it's too slow. I'm going to retire mine soon as I'm literally sat in my workshop making a scissor jig to fit my Ruixin. I'll have to find someone to give it to then coz it's too good to sit in a drawer.
