Hello Sarah from our farm in New Hampshire. Thanks for this guided tour of wood stove cook tops. First, I am encouraged to see so many new airtight kitchen cook stoves from the Amish, Canada, Italy and more. I have previously owned Canadian airtight stoves from Elmira Stove Works > Finley Oval and Heartland Sweetheart models. They were top of the line when I purchased them, but stoves have come a long way since then. We currently have a family heirloom stove that I restored, a 1930 Home Comfort. It works well for a non airtight, but the fire box could be larger. If I were to purchase a new one, I would look the Italian Rosa. I like the size, the glass front doors, the slide dampers on the fire door and the ash box door. Looks like an efficient, user friendly wood stove. I clean my cast iron cook top with super fine steel wool and olive oil or similar when the stove is cold. Then I take Cut-Rite waxed paper, crumple it into a ball and scrub the COLD surface. It imparts a teflon like wax coating that allows me to place slices of bread directly on the hot stove top to make toast. I do not use stove blacking. All the best ~ Diane
Wood stoves always bring some element of excitement to one’s life. I was fortunate to grow up with one (my mom still uses hers daily) The older stove tops with many nesting rings made for wild fire box loading! Put the wrong log in with a weird shape or knot, close the lid and the entire top would collapse and then things would get exciting real fast!
Enamel does not chip easy unless you drop something on it. They make enamel touchup paint that can be used, although the repair will not look exactly "perfect".

This is great! I’m looking to go off grid and self sustaining as much as I can. And wood stoves seem like a great way to hit that goal.

It would be awesome if you could show us how to clean and maintain the cooktop of these stoves. Like would steel wool be used, etc.

Both models have a comparable cooktop. Either model can support the weight of a canner.
