    Looking for a colorful and nutritious meal? Try this vibrant Vegetable Beetroot Burger paired with crispy Sweet Potato Fries! Perfect for a healthy dinner or lunch.
    Ingredients:
    Chickpea
    Beetroot
    Spelt flour
    Red onion
    Garlic
    Olive oil
    Mustard
    Light mayonnaise
    Multigrain bun
    Pickled cucumber
    Tomato
    Spinach
    Sweet potato
    Spices
    Recipe:
    Beetroot Burger:
    Soak chickpeas in water for 12 hours, then cook for 45 minutes.
    Chop the onion and garlic. Save a few onion rings for later.
    Peel and grate the beetroot.
    Fry the onion in olive oil until translucent, add garlic, and fry for another minute.
    Mix fried onion, garlic, grated beetroot, cooked chickpeas, spelt flour, dill, mustard, salt, and pepper.
    Form burgers and fry in hot olive oil for about 4 minutes on each side. Drain excess oil on a paper towel.
    Slice pickled cucumber and tomato.
    Cut and toast the multigrain buns.
    Assemble the burger with spinach, beetroot cutlet, sauce, tomato, onion, and pickled cucumber. Serve immediately.
    Sweet Potato Fries:
    Cut sweet potatoes into long pieces.
    Line a baking tray with aluminum foil.
    Place sweet potato slices on the foil, drizzle with olive oil, and season with salt, sweet paprika, and Herbes de Provence.
    Bake until lightly browned.
    Dressing:
    Mix mayonnaise with mustard. Prepare in advance and refrigerate if desired.
