Day 1: I think you should totally try the mod pack “Divine Journey 2”. This is a 1.12.2 expert mod pack. It will last a long time and you could make it like your skyblock series or your crazycraft series and since you are already playing older version maps I thought this will be fine.
If anyone else want to try just know it is a long expert modpack
