Gourmet Vegan Daikon Steak Recipe | Bold Flavors, Tender Bites

  • 🔔Daikon, a long white root vegetable with a hint of sweetness and peppery flavor, is commonly used in East Asian cuisine with soy sauce-based beef or pork stew. In this vegan recipe, I've adapted it with a Western cooking method. I make the vegetable stock from scratch and prepare the sauce separately, using cornstarch to thicken it easily. I pan-fry sliced daikon and then bake it in the oven to ensure it's tender.
    To serve, you can either pour the sauce over the daikon slices individually, like steak, or place everything in a bowl to share and pour the sauce over the top. Hope you like it.

    ➡️Ingredients:
    👉For the vegetable stock:
    - 250g carrot, diced
    - 2 shallots, cut in half
    - 50g celery
    - 80g leek
    - 15g kombu (dried seaweed)
    - 3 garlic cloves
    - 2 bay leaves
    - 10g ginger
    - 1 tsp fennel seeds
    - 1.5 liters water
    - Pinch of sea salt flakes
    👉For the sauce:
    - 1 shallot, finely chopped
    - 1/2 tsp balsamic vinegar
    - 1 tsp muscovado sugar
    - 2 tbsp dark soy sauce
    - 1 tsp cornstarch
    - 25ml water
    - 300ml vegetable stock
    - Olive oil
    👉Additional Ingredients:
    - 750g daikon, peeled and sliced
    - Olive oil
    - Chives, finely chopped for garnish
    🍽️ Serve 2-3
    ➡️Methods:
    1. Prepare the Vegetable Stock:
    - In a stockpot, combine all the vegetable stock ingredients.
    - Bring to a boil, then reduce heat and simmer for about 40 minutes.
    - Strain the stock through a sieve lined with cheesecloth and set aside.
    2. Cook the Daikon Steaks:
    - Heat a frying pan with some olive oil over medium heat.
    - Fry the sliced daikon steaks until both sides are golden brown.
    - Transfer the fried daikon steaks to an oven preheated to 180°C with a fan, and roast for about 20 minutes.
    3. Prepare the Sauce:
    - In a sauté pan, heat some olive oil over medium heat.
    - Sauté the chopped shallot until fragrant.
    - Add balsamic vinegar to the pan to deglaze it.
    - Stir in the vegetable stock and mix well.
    - Add the sugar and dark soy sauce, and mix again.
    - In a small bowl, mix the cornstarch with water to create a slurry.
    - Pour the cornstarch slurry into the sauce to thicken it.
    4. Combine Daikon Steaks and Sauce:
    - Remove the daikon steaks from the oven.
    - Place them in the saucepan with the prepared sauce.
    - Baste the sauce over the daikon steaks frequently until the sauce thickens and coats the steaks evenly.
    5. Serve:
    - Serve the daikon steaks with boiled brown rice or any other type of rice.
    - Sprinkle finely chopped chives on top for garnish.

      Daikon tastes like radish but mild and bit of sweet,sometimes I can’t find it in Tesco, I like the birds as well,😀many thanks!
