Hey John. Yep I like the high heat for that smoky flavor. Although my home kitchen stove is not even close to my 35000 BTU range at my beloved restaurant.

I’m sure you can use Stevia as a sugar substitute. As for corn starch, cassava is a good substitute. Hope that helps. Thanks for watching and happy woking!! 😃
