This is also how I beat Emerald as well using the same three characters! Just equip each character with LOADS of counter attack materia and away you go. I am glad I wasn't the only person in the world to do this method as well. LOL!
Around the same time i used a bit different strategy: limits and mime. No KOTR (i found it LATER LOL), so Cid/Barret/Cloud as they have most hit limits, then mime cloud few times, heal with megaelixir, highwind few times, another megaelixir etc...
not to rain on you parade but you just equip 2 materia usually hp plus and stay fully healed til materia storm and you get 7777 on all three characters
With the right set up I don't think counter materia is really hard to level up. Especially with 3x speed in current versions. It probably takes only an hour or two.
Even then KoTR is still FASTER since NOTHING will EVER outdamage a W summoned Counter Mimed KoTR even IF all 13 Knights are only doing 5000 to 6000 damage EACH.
@Veghesther I think Hyper plus redlining Cloud solo for Omnislash runs may be faster. Just put on 8 materia and spam regen. Airetam Stamp guarantees Limit bar and you can KOTR on turns he doesn't Airetam Stamp if you feel you need to.
You can max out your Counter attk materia in under 24 hours with the right set up. Its not hard. This set up was jus pure beauty. Watching Emerald get his ass kicked.
The town of Junon has a great grind location. There's slolums in the middle hallway toward the submarine area. Pull the alarm kn the wall and going slolums. The triple slolum is the best, as it's a hefty chunk of exp and AP, especially in the early stage of the game. One hour of grinding can jump you many several levels, and master handfuls of materia equipped per character, ESPECIALLY with double growth weapons and armor.
Just equip the scimitar weapon for Cid since it has triple growth and there you go. You can max out all the counters you need or want and get Emerald to essentially kill himself when he attacks especially if it's an AOE attack which will force everyone to counter attack him and if you maxed out all you're stats it means you can essentially 1 cycle him if you use hero drinks on everyone which require W-Item that can be obtained either during the Midgar raid or digging in Bone Village if you missed it in the raid and in doing so it guarantees you will be able to 1 cycle Emerald especially if you have maxed out materia on Missing Score which essentially will cause an overflow glitch which if you're lucky will kill him in one hit but since you are countering multiple times it won't count until after you are done with the counters and that's if Barret is the one that counters first if AOE happens or if Barret is singled out with a single target attack

When I leveled cover and then found counter my strat for everything was keep cover and counter on cloud and have him protect someone then count attack since he was the one who took damage instead.

My fastest kill was Cloud with 4 Counter+Mime pairs. Use w-item to give Cloud 2 hero potions and the other character to cast Regen. Have Cloud use Omnislash and let the beat down commence. He will use Omnislash 4 times when hit and you just use mime on his turns while the other two just stand there.

Easy to do. Attach them to a triple ap growth weapon (Cloud’s Apocalypse or Cid’s Scimitar), go to the northern crater and fight movers. You always fight them in threes and they give 800ap apiece. Magic Pots are second best where they give 1,000 AP apiece
After watching this again, either this squad or replace Cid with Red XIII are the teams I used. Literally beat em in 5-6 mins without Knights Of The Round
Why? If you want exactly this, it is still here. The remake will have a more active fight to enjoy alongside this one. You can't just break it in set up, like pre zodiac ff12.

Also Aire Tam attack only comes out when Emerald has its arms open and as you can see in the video, a single attack and then 8 counter attacks and then back to the original pose.

In my last game I did something similar, I would farm counterattack and other counter materias (magic counter, counter) in 2x/3x growth weapons. Didnt have 8 on each character, but concentrated the best on the strongest character, and it was enought alongside hero drinks to kill even ruby weapon, without even spending THAT much time leveling. Of course I did some extra tweaking like adding a magic counter + full cure materia, and having infinite fenix ressurections to keep them alive for a long run
It's just like FF8's Omega Weapon tactics not accounting for Terra Break. If you defeat the superboss fast enough, you don't need to deal with the deadly signature attack.
I was today years old when I learned that equipping multiple Counter materia allows you to counter once for each materia lol
The real boss fight was grinding out that many counters.

I got Lucky 7s on Emerald Weapon. One of the greatest moments of my life.

This is how I did it with less counter materia. It took over a half hour. I put newer materia in the slots to take advantage of the AP.

Those ridiculous counterattacks triggered specifically by Ultima or KotR are bullshit, considering the time and effort needed to unlock that materia.
