I noticed my art work on the firebox is turning a golden color like yours. I see other people’s pictures and there’s look new still. I’m like either they don’t use it or I’m doing something wrong. Super informative Fat E! I got a new smoker coming from Klose Pits soon. Do you have any recommendations for seasoning or protecting the outside of the pit? It will be painted with high heat paint but I just wanted to put a little extra protection as I live I a super humid and salty air place.
For coating the pit in oil I like using a spray bottle... Gets a coverage ... Then you can use the paint brush to spread ... Gotta get a heavy duty one though ... Good video
I am a huge advocate of foil drip pans and lining everything with foil that I can. That eliminates having to clean the bottom of the smoker and tuning plates. Etc ... My cabinet smoker will get the same treatment. Foil pans and I hope to hang most of what I smoke in there so that eliminates rack cleaning.

One thing I saw from someone but I do not know who. Have you seen this flimsy ash tray holder? LSG wants $90 a piece but I saw someone have a meshed flimsy ash matte pan. Do you know what it is???

I build my own bbq pits bro and the advices i have for you when you buy one tell them not to paint the inside smoke then out first with grease and smoke to get that coating you want on the in side but i like your videos bro good job on the videos and you are right we all need to keep these bad boys clean

Pro tip from me. Ya that's right, I said it. Put on surgical gloves and clean all the flakes and gunk using a brush and knock it off into the bottom of the pit. Then dump old ash in there and rub it all over the sides and bottom. The ash will absorb all the grease and the grit will scrub the metal a bit. When you are done, you will have something the consistency of pasta dough with all the fat absorbed by the ash. Throw the ball of ash/fats in the food waste bin, garbage or over the fence into the field. No water to add or splashing of dirty fatty water. Just add the ash slowly to get the consistency and the amount of cleanliness you want. Way easier and faster.
Very good video. Do you think a smaller paint roller would be easier to apply the canola oil. One other comment. You are not seeming paint flaking off. The inside is not painted. It is carbon residue from cooking.

I know who you mean Lenard. I just cant remember him. I know there was also a lady that would come on. But Yea Bob Ross was by far my Favorite. I still watch his videos today.
I know this isn't the answer you want to hear, but honestly it all varies with each brisket. Each brisket I have ever done has its own personality. A good guideline I use is.... cook at 225 to 250, put a probe in thickest part of meat. keep the heat constant never let get too cold or too hot. Hours and hours go by and you will see your brisket seem like its just not getting hotter anymore. Thats a stall and is normal. Then once it gets around 190-195 I begin to probe it with the thermopen and check for tenderness. If it goes in like butter its done. if its still a bit tough or resistant to the probe going in, it needs more time. If needed more time Ill check again at 198-200 and so on until its like butter. I have honestly had some huge briskets cook in like 12 hours and others cook in 24 hours. its really just up to the brisket. Id say on average, it usually takes 18-20 hours depending on how many briskets I have on. If only 1 brisket it can run from 12-18 hours. Hope this helps sorry so late.

I herd WD40 cleans stainless don't know what the heat would do to the WD40 probably would have to wipe down pretty good before heeting up the cooker

I’ve noticed just a little elbow grease and a water hose work just fine. Worried a power washer would peel paint accidentally
