Making Basil Pesto Pasta Is So Easy... And Tastes Amazing

  • You Can’t Go Wrong With Freshly Made Basil Pesto Pasta
    Ingredients -
    1-2 - Garlic Cloves (Use 1 For Mild Flavour)
    15g (0.5oz) - Parmesan Cheese, Freshly Grated
    15g (0.5oz) - Pinenuts, Toasted
    1 - Large Bunch Of Fresh Basil, Picked
    3 Tbsp (60ml) - Extra Virgin Olive Oil
    1/2 - Lemon, Juiced
    Seasoning To Taste
    Extra Virgin Olive Oil To Your Liking
    300g (10.5oz) - Spaghetti Or Pasta Of Your Choice
    Parmesan Cheese To Serve
    Fresh Basil To Serve
    Cracked Black Pepper To Serve
    Method -
    1. Place a large pot of water over high heat and bring it to a boil. Once boiling, generously season with salt and cook the pasta for 1 minute less than the packet instructions. Remove and drain.
    2. Add the pine nuts and toast in a pan over medium-high heat for 2-3 minutes or until golden and fragrant. Remove and let cool.
    3. In the meantime, place all ingredients into a blender or food processor and blitz until it forms a coarse paste and runny consistency. Check to season and adjust oil amounts if need be. Remove and set aside.
    4. Place the drained pasta into a mixing bowl, add the pesto, and combine. Serve in bowls, and garnish with fresh parmesan cheese, fresh basil leaves and cracked black pepper. Dig in.

    Pro tip: instead of grinding till smooth, pulse the grinder in short bursts until smooth. If you leave it to just grind, the heat of the grinder cooks the Basil which makes it bitter. This doesn't ruin the dish by any means, and may even be preferable depending on individual tastes. But it's something you should keep note of when making Pesto. This problem can also be avoided if you grind the pesto by hand with a pestle and mortar 👍

    Probably an unnecessary tip, but if you want an emulsion with less oil, boil the pasta flat in a wide pan, so you have a higher starch to water ratio than you'd get if you did it in a pot. Then use that water when making the emulsion for the pesto.

    This isn't cheap even in italy, just because of the pine nuts, but there are pesto variations you can make with cheaper nuts and/or leafy greens. Try cashews, chestnuts, arugula or spinach.

    Best tip: Use the italian basil pesto from costco. Tastes amazing and much cheaper. It also lasts you so long.

      They all have different flavour profiles and strengths. Usually the more expensive ones are a lot smoother than the cheaper ones

    Noooo...I'm Italian.. pine nuts do not need to be roasted please 😢 not lemon juice either😢 it ruins the real taste !!

      Toasted pine nuts create a better flavour. They can be fresh if you like that and same with lemon juice. The acidity prolongs the life and adds flavour

    That’s wrong on so many levels. Italians must be going nuts. You make pesto with a mortar and pestle and that spaghetti must be the cheapest you could find. Rather audacious of you to call yourself a chef.
