As a dog person, alll that “zig zag” stuff is to reflect the “feathering” of the coat that is characteristic of that breed. Similar to an Irish Setter, although not as pronounced. Versus a Labrador who’s coat would be smooth. 😀
Totally agree, you need the zigzag to distinguish the Irish Red and White from other breeds, otherwise he’s going to look like a miscoloured Muensterlaender 😉 I would probably stitch out the feathering in white instead of black.
