I think you got the Outside and Inside steaks reversed. The inside skirt tends to be the larger and tougher while the outside tends to be smaller and more tender.

Ha, yeah, that didn't make sense. I've never heard of a butcher or chef say the inside was more tender either. Too bad so much work was put into the video to mix up the cuts.

Outside skirt steak is the more desirable cut it runs about $5 more per pound then the inside skirt steak and is way more tender

Yes, but it's easier to recognize because it comes with a thick leathery membrane that has to be removed

As other have pointed out the smaller one is actually the outside skirts and the larger/thicker one is the inside skirt. Outside does have a beefier taste. However, where I'm at outside costs nearly 3 times per pound more than inside.

hi Roel, nice video! But can you make one where we can see how you handle the meat, from start to finish? How often you turn the meat, temperature etc? Now you put it on the grill and magically it is finished.
You should try cauliflower with browned butter and heavy cream poured over it! That's how my Oma made it. Definitely going to try the cheese sauce and steak!
In Texas, the outside skirt is the smaller one. We pay a premium price for it.

Sorry to bring this up, could just be a mix up but you got the steaks mixed up in the beginning. Been buying these from several budgets for years.
Inside skirt is the much larger, inexpensive and chewier steak.
The outside skirt is more narrow, expensive and tender steak. Most japanese bbq yakiniku restaurants only serve outside skirt as their only “skirt” option.
Most of the information on the web will support that.

Outter is better but much more expensive , inner is very good as well just needs to be marinated and broken down more it's not as tender , also a good question is do you like your skirt steak ran through the machine ? I find if you marinate it well and cook it right no need for that .

Correct. The smaller skirt is the outside and the better choice. The inside skirt is twice as wide and longer and is also a little tougher than the outside. They seem to have them backwards here which only adds to the confusion.
Yeah. What is called Outside skirt actually sits inside the cavity while the Inside skirt sits outside.

Try some blue stiltonsauce, add some chopped up jalapenos, add some chicken stock, garlic and just a drizzle of the liquod from the jalapenos.
Throw in stilton and cream and cook it down. Awesome stuff with meat!
You go ahead and eat the inside skirt. I'm going with the outside skirt steak every time! Outside streak is thinner and the inside skirt is wider. I think they mixed them up.

Skirt steaks are way better marinated over night grill them up over high heat. Make a nice Chimichurri and guacamole dip mmmhm delicious.
So how DO you cook an inside skirt steak to make it as tender as possible? Is it possible to make a delicious inside skirt steak?
Pitmaster X got the names wrong in this video. The smaller (and tenderer) of the two is called the OUTSIDE skirt. The larger and tougher one is called the INSIDE skirt. So the nicer one is the outside skirt, not the inside one. So make sure you ask your butcher for the outside skirt.
What I took from this video:
Inside skirt - more tender, delicate beef flavor. Use simple seasonings, and treat as you would another steak dinner.
Outside skirt - tougher, deeper beef flavor. Able to stand up to marinades/cures for flavorful tacos, sandwiches, pastas, or other foods that require the ability to stand with other flavors.
Watch out, the names are mixed here what they refer here as “Inside skirt” is the actual Outside skirt, and what the call “Outsideskirt” is the actual Inside skirt, so just flip your takeaways!
They switched the names by accident. The outside is the more tender cut
@@briantopps5638 Not by accident, it shows they lack knowledge, it is very common knowledge to know outside is way better than inside. A lot more expansive and hard to get.

Guys you have it backwards, the OUTSIDE skirt steak is smaller, more tender, and costs more, and the INSIDE skirt is tougher, larger, and has less flavor, hence the lower the price.

Skirt steak has recently become my favorite steak. I avoided it for years because I thought it was simply a flank steak. Big mistake, so much flavor and so tender with a good chew

Pretty sure you guys confused what’s inside and outside. The lower bigger one is the inside skirt and the outside skirt is found on the inside of the ribs. I know confusing right. But that’s the way it is.

Maybe add some gorgonzola to the cheese sauce. It will kind of overpower the steak but if you have a steak that is not absolutely top-notch then you will definitely enjoy it with some gorgonzola cheese sauce.

Hey, just subscribed. I am from Super-South Germany (Bavaria) - 10 km north of Austria. We eat this as well, but cooked in a beef stock for 20 min and with fresh horseradish. I agree, the inner part is much better. Here we call it Kronfleisch (crown meat)...😋👍🏼🍺🥨
Just saw it. The smaller part is the outside skirt and better than the inside. It’s a bit confusing, because the outside skirt is more inside the animal... for skirt steak: „better grill/eat outside, as grilling it inside is not so nice...“ 🤣

Concur with previous comments. You mixed up your cuts. The outside is smaller in width, and the inside is wider and a bit longer.
