I always calculate with closed lenses and do tracking shots keeping the same distance where I have focused, sometimes depending on my intention I usually use more open or wide lenses at f6 to have focus control. However, you are a bit limited when it comes to doing camera movements like dolly in and others, since I don't have anyone to focus independently, but that's how I try to work it out. In summary Closed Lens: I calculate the distance of my focus and maintain it if I do traveling or 180 degree turns. Open lenses: I prefer an f.5 having everything in focus and it gives me the ability, even sometimes, to do those in-and-out car shots without losing focus as much.
