i use olive oil in many of my breads as well as avocado oil i make an olive oil yogurt bread which is delish! for a really unique spin, try using spanish olive oil instead of greek or a more mild oil.. it adds a difft but great taste, kind of a hint of spicy??

Yes, you can, I would just reduce the amount of water by the amount of oil.
