I make teriyaki tofu cubes which are great, but this looks like it would mimic chicken better which I think my husband would enjoy. By the way your granola recipe rocks! Thanks so much for sharing!

Yes - but just plain medium is - I don't know - it because grainy when used in sauces and it falls apart when using in firmer dishes. I honestly don't know what the hell people use it for

It's true! Freezing is mostly passive time though, you just have to remember to do it - which, you know, can be challenging some days :)

Silken is great for creams and desserts - I just honestly don't know WTF to use medium for.

I freeze then defrost my tofu before air frying it
The only time I ever use medium tofu is when making a vegan ricotta.
Even then I prefer firm.
