  • Today's video brings me to Pingle, it's another county in Guilin, not too far from Yangshuo! I've made a special trip to try their famous 十八酿 18 stuffed foods. Everything from tofu, to eggplant, to beansprouts, they stuff EVERYTHING here!

    Hi guys! Keep in mind these videos from my Guangxi series were filmed in mid October, before the recent COVID flare up that's happening around the country. I've been based in Changchun for the last month or so and as of yesterday we just got locked down :( will be making videos about the current situation and how I'm currently feeling, but I still have one more video I filmed in Guangxi to post next week. It's a difficult time right now, and hope you guys can understand it's difficult as a youtuber to post in real time due to editing, scheduling etc...

      Even if it isn't that large, Mountains make isolated communities and isolation creates uniqueness. Plus being mountainous means you have large variation of environment, and so different food developed.
      I live in Los Angeles. we use Sunset magazine to determine what to grow in the west. Arizona would have three different environments to grow different plants. Los Angeles will have over ten in the city, because of our mountains.

    Regarding the locations, the city/urban area is called 市里 or 市区,the surrounding areas is 郊县,or 下面的县市,桂林地区 is the whole administrative area.

    I'm a fairly new subscriber & I've been watching your videos in spurts. They're beautiful and remind me of a missed opportunity. I had the chance to move to Hong Kong and work for a friend's family. I was so afraid I'd never be able to speak Cantonese and wouldn't fit in with my friend's family. To this day, I still cry over my foolishness. I missed out on an adventure of a lifetime. So watching you makes this old gal feel melancholic, yet (this sounds odd because I'm new here) I'm so proud of you. Lost opportunities... perhaps I'll get to visit China some day and follow in my Dad's footsteps to start; he adored rural China.
    Thanks for bringing to life this beautiful country and its beautiful people for me, and others, of course. Oh, and we can't forget the food. Yum yum
    Damn, I wish I was that naïve 20 year old again, I'd say yes to China and worry about the language later.

    I haven't had pomelo rind in decades! The labour involved in preparation to get the bitterness out has long made it disappear from restaurant menus. You are so lucky to run into this, in stuffed form no less. What a find!

    The counties you visited are in Guilin Region. Guilin is a Regional level city(地级市),which is a type of Region(地区),a typical Region is composed of a few counties(县) and some districts(区)。Both 县 and 区 are the same adminstrative level:the county(县级) level.Traditionaly counties are more of rural areas and districts are urban areas.
    So you can say those city districts make up Guilin City,and those districts and counties combine make up the Guilin Region.

      @@BlondieinChina you'll find it a bit similar to say... Tokyo and Osaka, where for example Tokyo on maps is the long horizontal stretch that's the prefecture, but you can sometimes hear "23 wards" or "city center" which is the actual Tokyo city, comprised of the 23 districts(wards) and there's a number of cities mainly to the west of the city center. and then there's the Greater Tokyo Metropollitan Area which could be a number of different configurations, but generally the urban sprawl that consists of all the areas where people commute to Tokyo to work, so it covers a massive area surrounding Tokyo and that's generally where people get the "Tokyo population is 37 or 42 million", by comparison, Canada's entire population is around 38 million. The city of Tokyo (23 wards) is a far more meager but still crowded 14 mil. it can be confusing as heck if the definitions aren't clearly stated.
      btw, my area of Hangzhou, the regional level city includes all the way out to thousand islet lake, which used to be a 3hr drive to get to until they built a much better highway some years ago.

      It’s more like conceptual things, I guess? Sydney we talking is often referring to greater Sydney area rather than postcode 2000 area.

      probably, Guilin City just like Sydney CBD. Yangshuo and Pingle are same as Georges River or Bayside council and districts are same level as Chatswood or Atarmon. As a Chinese I don't even familiar with the city levels, haha. btw, actually, there were the stuffed bean sprouts dish before, Xiang Yin Ya(镶银芽).

    I'm not usually the envious sort, but I am JEALOUS of you this time around. I've loved unusual stuffed foods since having stuffed lemongrass in Laos. (Yes, the chicken mince was in the lemongrass, not the other way around, kind of like the stuffed garlic here.) Back home, I've stuffed shiso and sesame leaves, among other things. Now I have even more ideas to try! Thanks so much!

    In Italy they make a stuffed squash flower, which is stuffed with cheese, battered and fried. Yum!

    pumpkin flower is really tasty. my aunt and my mom usually dip it in a batter then fry it, then it will be stewed/stirfried. really tasty

    Star fruit is native to Southeast Asia. Given the fact that Australia is located in the "backyard" of Southeast Asia, I'm surprised you have never seen this fruit.

      I was also surprised that you haven't tried it before. In Europe it was super fancy to put it on every dessert, I guess in the 90s or so 😂

      @@taotao98103 right now it is not that popular as it was 20 years ago, I guess. but you definitely can buy it in some specialty stores. But I don't know if it tastes they same as if you would by it fresh where it grows. I remember it to be very sour (not ripe?)

    Pomelo rind has a place in old style Cantonese food. My mun said there was a Dongguan recipe of sweet pomelo rind. Stuffed "3 treasures" (eggplant, chilly, tofu) are popular street food in Hongkong.

    About Star Fruit... When you trim the fruit for serving, you can just dump the trimmed off bits into a jar, throw in a handful of mint leaves, mashing it a bit with a wooden drink plunger or rolling pin, then fill it up with ice cubes and cold zero sugar lemonade... Now you got fruity refreshing drinks to accompany a nice summertime dinner...

    If you want to eat individually stuffed bean sprouts, the place is go is Qufu, Shandong, the hometown of Confucius. With labour costs these days, it will likely be pricey, but we'll worth trying as a representative example of refined Confucian cuisine.

    I was born and grew up in Guilin. The bigger region and entire area are often referred to as the 'Big Guilin', and the small urban city area is the City of Guilin or Guilin City.

    Actually stuffing in one bean sprout exists. It was a palace dish eaten by the ancient Empress Cixi. Chinese video uploader like “绵羊料理” in Bilibili used to recreate this dish.

    Some foods are quite similar to what I know. The stuffed lettuce reminds me of Kohlrouladen (pork wrapped with cabbage) and in northern Italy they fry zucchini flowers and I guess also stuff them. Stuffed Peppers, zucchinis and eggplants are also common. But it is really funny that they have it as their specialty in this specific town. Thanks for your interesting and entertaining videos! I really enjoy watching them and can't wait for the next one 🙂

      stuffed cabbage is different. its thicker and can't be made in such a neat package. By what the vlogger describe the lettuce, it might be another vegetable closer related to cabbage. I think it's a mustard or something. . But it does look like lettuce to me thought. I recognize it, because i was planting some vegetables, and had better luck with mustard and look for some other interesting seeds. I might have to stop, because I made a mistake and grew some in summer, and got over run by beetles.

    Guangxi born and raised for 12 years, I still had very deep connections to Guangxi and missed the place after living in the US for 15 years. We have nice weather there, people are still wearing T-shirt and short in November, unlike the other part of China where it’s very cold and snowing. We had cheaper houses and low living expenses. We can grow so many fruits with the tropical climate. When I was little, we had date trees, lychee trees, mango tree and we can grow watermelons and list can go on and on

      The area might be the ideal place to live. I looked at all the areas with long lifespan. They seem to be all in mountainous areas with mild weather. I think what is is missing, is it's far from the ocean.

      @@slewone4905 you can go see the ocean with a few hour of drive. Beihai is another city with the Guangxi province and it's on China's southwest coast.

    Guilin will always be a very special place for me. I loved taking the boat trip on the Li River and seeing the karst mountains. I felt as though I am in a traditional Chinese painting. The mountains are like scattered dragon's teeth. I felt I was in ancient China, not the real world. I also have another special memory of Guilin. I was with a tour group of only 4 people. Since none of us ever travel across China before and none of us spoke Chinese, we had a national tour guide with us, her name was Lily. She only been a tour guide in Bejing so each city we visited we also had a local tour guide from that city. The first time I met Lily was in Beijing on the bus going to the airport at the start of the tour. Lily and I was alone when we met. I felt as if she was the one for me at first sight. She felt the same way about me. But she was wearing an engagement ring. I respected her decision to be engaged to another man. When we were in Guilin, Lily asked me to go dancing with her. I told her "no." I did not feel right dancing with Lily when she was engaged to someone else. I have always regretted I did not go dancing with Lily. I later learned that Lily had wanted to marry me. But I said "no" when she asked me to dance with her. I broke her heart that night in Guilin. I will never forget Lilly and how she made me feel the first time we met, the chemistry between us. And then I saw her engagement ring. I could never ask her to cheat on the man she was going to marry. I waited for her to remove her engagement ring. She did not. I never told her that I wanted to marry her.

      In China people don’t really have the concept of an engagement ring so the ring might just be her liking the ring and putting it on her ring finger without giving much thought to it

    regarding stuffing meat in the bean sprout, what you imagined was not wrong. The Empress Dowager Cixi made people prepared this for her. You can search for this on youtube, some influencers are trying to make it too..

    We, Cantonese normally don't consider wrapping as stuffed. For us, stuffed food means food inserted with meat fillings such as stuffed fish. Wrapping means wrapping, such as paper-wrapped chicken, wrapped glutinous rice etc. 😂

      By what you describe, wrapping is when you don't eat the wrapping. is there an example of a wrapped food that you eat the wrapping?

    The real stuffed bean sprouts actually existed, using tiny needles to stuff meat into a single bean sprout. At least it was said to exist in the imperial court kitchen where they have infinite budget

      Those were probably Chinese-Malaysians dishes (Yong Tau Fu ie stuffed tofu) as there's a large Chinese population here in Malaysia.

    Specially dish tofu remind me of my grandma when she cooked for me. She used to fried the tofu first and then fill it in the triangle shape slit in thr middle. She steam cooked it with some cabbage making it more flavour with chicken broth.... love your channel always happy.

    Some cities are at same adminstrative level of a county and they don't consist of some counties. In Chinses, we call them 县级市, means a county-level-city.
    Some cities are at higher level than a county and their administration area consist of several counties. We call them 地级市, means a rigion-level-city.

    My parents used to make porridge using ~pumpkin flowers with smashed rice and pumpkin plants ( you only use the young one or else there are a lot of fibers in them which are very difficult to eat ). You call it pumpkin and I think of the red ones during halloween. But the plant actually produce fruits that are green and long and they don't look like the typucal pumpkins at all so I am not sure if the translation is right. I'm not sure what it is called in chinese since I was born in VN despite I only have Chinese blood. But in Vietnamese it is called Bi. Or you can search Cay Bi which means Bi plant

    In singapore we have a cuisine called 酿豆腐. We stuff it with fish paste usually and we'll stuff bitter gourd, eggplant, old tofu etc. I guess the influence should be from the place where you are at or maybe fujian influence.

    Actually we do have stuff bean sprouts in China, and it literally just stuffs meat inside each single bean sprouts! I didn’t know that till few months ago on 小红书, it’s really interesting but hard to make.

    These are originated from Hakka. When my mum was alive, she loved to make this stuffed vegetable & it was so so onerous, taking ages. Here in Melbourne AUS you can get them in city & in Glen Waverley in Victoria- costs around A$16 for 6 stuffed veg and soup and noodle. Can choose Tom yam soup base, or curry or chicken broth

      is this the Malaysian dish of "yeung" tofu? I once ordered a soup noodle dish based of this meal, beside stuffed tofu, there was stuffed chilli, fried fish balls etc. I was stuffed!

    To be exact Guilin is a kind of prefecture-level city which consists of the city proper and some counties or county-level cities. So Guilin can mean both the whole area and the city itself.

    Stuffed tofu is still one of my fav as a guangxi local. Even tho we live in Sydney now, my mum still makes this dish yummmmmm ❤😊

    Glad you enjoyed my in-laws home countryside... we're there ~8 times a years since 2004.
    It's quite and can be surprising... we enjoy eating on the water front or at our nephew's restaurant.
    During April our family gathers to visit our ancestors and have a great time visiting each other.
    Can't wait to get to the homestead... our uncle and wife still do the farming and live in the house they built in 1940; she can cook up a feast over her open pilgrim fire pit.
    BTW, did you figure the math on their age?

    Hello! I enjoy your videos, however, I was wondering if you could show one where the people you came into contact with were amazed at your language skills. I watch Oriental Pearl, as well, and it seems like all of her videos show people amazed by her language skills. Anyway, it would be interesting if you showed some of these interactions too. I was stationed in Japan for two years and spent time in South Korea as well.

    The experiences during my visits to China are the same as yours. People at overwhelmingly helpful, friendly, kind and so curious. In the Western world we have to learn to separate the Chinese people from the Chinese government. China is also full of individuals working hard for a better life just like us.

    我在广西待了很多年。广西很多釀,我觉得豆腐釀最好吃。
    强烈建议你去广西的北海市,那是一个非常美丽的海边小城市。虽然很小,但是很干净很漂亮。
    可以吃到很多美味的海鲜。北海市的沙虫是一个特色食品,价格很昂贵,干沙虫一斤要400块钱。外形很猎奇,像蚯蚓。但是你应该尝一尝,绝对是新奇的体验。
    北海市的和安宁春城是最大的购物娱乐商场,你可以去逛逛,里面有很多广西特色美食。
    北海银滩非常漂亮,可以说是中国最漂亮的海滩之一。但是现在天气冷,海边太冷了,不过也可以逛逛美景。

    u can call the center:GuiLin City Area.
    the outside nearby called:GuiLin XX county.
    中文不知你看不看得懂:
    中间4个区组成的,一般叫做:桂林市区。
    外边的县,一般叫做:桂林XX县
    而桂林市,有时会有歧义:1.你在其它城市说桂林市,一般指桂林整个区域;2.你在桂林境内说桂林市,一般指桂林市区。
    我不能代表整个中国🇨🇳都是这习惯,至少我那边是这么区分的

    酿also one of Chinese Hakka famous delicacies. My mum always cook 酿. For us we usually only used tofu and bitter melon.
