I made this today. Followed directions except I used my own creation rub. Absolutely phenomenal. I was worried that it would dry out, but it was so tender and juicy, we didn't even need a knife to cut it. It took a bit longer than expected, but I used the thicker half of a 12 pound brisket and it worked beautifully. Thank you! Wish I could include a picture! :)

I ran mine on the traeger with smoke tubes at real low heat for the first hour and a half and then followed Papa joe method to finish it off. One of the best briskets i've made in twenty years. Twice as mist and juicy as using my offset smoker with close to zero effort after wrapping. Using maggi as a bender pure genius. This method works well using ribs too. Great video one of the best on RUclips. Thanks Papa.
I live in a condo and can't have a smoker and have used the oven method for years. Try using curing salt to create a fake smoke ring. I use liquid smoke as a binder. Last time I did a brisket this way, our friends thought it was done on a smoker.

I stalled after I wrapped at 165 dropped to 156 hung there less than an hour I went up to 300 and came home. it was a very small 3lb flat 6 hrs later perfection!!!! I live in Idaho and it’s always so cold that my smoker can’t work for 8 months out of the year, so I’m so glad you made this video, it lets me cook all the bbq during the 8 months of winter inside away from the razor cold wind, ice, sleet, hail, snow, just miserable weather. I love brisket and we have many restaurants in our area that supposedly specializes in brisket but this brisket is the best I have ever seen! I have watched a ton of videos on making brisket and this has the best details and tips. That dark bark makes me want to go get a brisket and try to do this recipe. Papa Joe, you have the best oven roasted whole brisket recipe by far. I just did one myself and it was a choice Costco brisket. I've smoked them for years and wanted to try something different. I used a 12hr cook method of low and slow and I took it out at 185ish. Then recalibrated my oven to lowest temp of 150° where I left the brisket wrapped in paper and foil until the next evening supper. A total of 34hrs. I lost some of my bark due to wrapping it in the 170's. The 180's is the right decision on your end. Almost all the fat cap was rendered down except for the area down the middle. Slicing it proved to be very tender and without it falling apart. It passed the bend test as long as I was gentle with it. The tenderness and moisture was great, the flavor was great, long cook not so great but as you know, there's not as much effort as in smoking on an offset rig. Note, I did have to foil the crispy edges at about 2hrs. The lean end started curling but the loosely foiled point and lean ends stopped it but still let it develop bark. I did use a water pan for the 1st 3 hours until the bark was set and removed at that point. I'm definitely going to try your recipe next and I'm going to purposefully look for a select grade to do it with. A real pit master can take a tough junk piece of meat and turn it into a thing of beauty and deliciousness. You are that pit master.

Great vid...I tell folks to just mash that dry rub on, binders really arent needed on red meats I find. But since it's in the oven and not getting smoke, you kind need something to bring that flavor out on the surface, so that makes sense in this case. Impressed you made a select cut work too, not many folks do that, I love that! I will also say the best way to ensure a smoke ring is: let your brisket marinade in fridge for several hours overnight, then put it in the oven (or smoker) basically right out of the fridge...by doing that, the temperature difference between the outside surface and inside causes that ring to form, its all about the temp differential. A lot of folks like to sit their brisket out to warm closer to room temperature, and you can do that, but if you want that smoke ring, you have to go fridge-to-oven/smoker.

thanks so much for this recipe! i did a small twist for a binder by using worcestershire sauce and liquid smoke for my binder. came out AMAZING!! i’m not sure i’d be much happier if i smoked it traditianally! 🔥💚🙏
That's a great jolly laugh during the taste testing! My late Dad was a master at brisket and pork shoulders on his deep, heavy structural steel pit with mesquite. Although I watched him closely, he never explained the steps and did everything by eyeball with no thermometers. I've had trouble trying to approach his results despite grilling, smoking and cooking for forty years. Since it's only the wife and myself at home now, I tend to buy small hunks of brisket, either flats or points, and braise or pressure-cook them. I have a nice thick combination cut chunk I'm about to thaw and oven-bake. It's sort of a center piece with parts of the flat and the point. I'm torn between doing a beer braise or a dry roast like you did here. I generally use either grainy mustard or worcestershire or liquid smoke for a binder, and the Texas-ish rub of salt, pepper, onion powder and garlic powder. Sometimes I'll copy my Dad and make slits in the meat and insert garlic cloves. By the way, my brisket trimmings go with pork trimmings into home-ground burger. Thanks for the information.

Great vid...I tell folks to just mash that dry rub on, binders really arent needed on red meats I find. But since it's in the oven and not getting smoke, you kind need something to bring that flavor out on the surface, so that makes sense in this case. Impressed you made a select cut work too, not many folks do that, I love that!
I will also say the best way to ensure a smoke ring is: let your brisket marinade in fridge for several hours overnight, then put it in the oven (or smoker) basically right out of the fridge...by doing that, the temperature difference between the outside surface and inside causes that ring to form, its all about the temp differential. A lot of folks like to sit their brisket out to warm closer to room temperature, and you can do that, but if you want that smoke ring, you have to go fridge-to-oven/smoker.

Nothing can beat a smoked brisket. However, this is perfect for the winter and for when I don't want to smell of smoke haha.

That's a great jolly laugh during the taste testing! My late Dad was a master at brisket and pork shoulders on his deep, heavy structural steel pit with mesquite. Although I watched him closely, he never explained the steps and did everything by eyeball with no thermometers. I've had trouble trying to approach his results despite grilling, smoking and cooking for forty years. Since it's only the wife and myself at home now, I tend to buy small hunks of brisket, either flats or points, and braise or pressure-cook them. I have a nice thick combination cut chunk I'm about to thaw and oven-bake. It's sort of a center piece with parts of the flat and the point. I'm torn between doing a beer braise or a dry roast like you did here. I generally use either grainy mustard or worcestershire or liquid smoke for a binder, and the Texas-ish rub of salt, pepper, onion powder and garlic powder. Sometimes I'll copy my Dad and make slits in the meat and insert garlic cloves. By the way, my brisket trimmings go with pork trimmings into home-ground burger. Thanks for the information.
