I've learned my lesson watching Pasquale's videos. Watch them at a decent time(not the middle of the night), and eat while you watch. Spent too many nights clanging around the kitchen making something to eat after watching one of his vids. Tonight penne and meatballs. You're the best chef(and you remind my mother and I of her grandfather, my great grandfather). All the best to you and your family.

I just did this recipe and I wanted to let you know this recipe deserves 5 stars. I used bacon and cooked it same way you cook the guanciale. Once cooked I broke it into small pieces. Even though the ingredientssed in this recipe are simple, their combination creates a mouth watering experience. I could eat this dish at least 3 times a week. Mamma mia! Thank you for sharing this flavorful recipe. My family loves it.

I watched your video and then went out and bought all the ingredients. Yesterday I replayed the video and followed along. The result? It was outstanding. My wife is a vegetarian so I used veggie bacon and it came out well. Pork bacon may have been better but the rest of the ingredients made up for it. We selected a 2014 California Merlot from the cellar that I made from grapes. Salute!

Well it looks like I finally printed it out but I don't need to print several pages. Just give me the ingredient list and the directions and I'll take it from there. Remember, ink is expensive! BTW that recipe where you use spinach and put the uncooked spaghetti on top was a real winner!
