As someone who used to use org-mode in the past, I can say that I've stopped using it, mainly cause it requires a lot of effort, the biggest advantage of org-mode is also it's biggest weakness, that's the headers and tags. It requires some effort learning those but on the other hand that's where the power of org-mode lies. I would have preferred if those headers, tags, etc. where not org-mode specific but more of a markdown extension that could be read and compiled by most markdown compilers like pandoc and others.
you can add the tags ":noexport:" (don't export the section) or ":ignore:" (don't export the header) to headers. which allows for a lot of headers / subsections. I have sometimes 8-9 level deep headers and export to only 2-3 level deep headers (good typography). It is in ox-extra.
I have come to prefer Org-mode, but hs a few shortcomings. For example, you need to choose between interactive or inline figures. Of course it is relatively easy to save the figure from an interactive Matplotlib window and incluse it in the org file just below the relevant cell, and this is what I do. But it is not a complete drop-in replacement.
Around 9:50 the key combo for editing the source block in a separate buffer window is: C-c ' (ctrl+c apostrophe).
