In my outlet when we make such rotis what we do is roll the dough half in size, apply oil with fingers and top with other roti half rolled, (just like a layered paratha, then finally we roll it out fully and deep fry them in hot oil but just briefly like cooking from one side fir 5-7 sec. Then turn over and again 2-3 sec then remove, then we separate them, this way it keeps moist longer throughout the day. Thx chef, looking forward to meet you some day, I am also a chef graduated from IHM and worked in Indian hotels and international cruise liners, now running my outlet.

My mother used to give vegetables rolled in roti like this 😆 we used to called it 'kattu' 😁 Same way my husband calls it 'poney poney' I am sure there must be more names given by Indian mom's👍😊 I learned making Frankie masala from here for my future kids😆😆😆 ❤️
