How do you approach arranging a song?

In short. First I find a key that suits the guitar. Then I start writing down the melody. Then I find out which chords are used, and find the bass from the chords. The easiest thing is to just pick the root note of the chord as bass, but in some cases it can sound a bit boring. Finally, I add other chord tones and use some fingerpicking where there is room for it.
