One of my bucket list thing is to actually go to "All thing BBQ" buy a YS640, all the spices I can think of, and meet Chef Tom and the crew. Would be nice to try some stuff they're cooking that day. Their videos never disappoint.
Looks great! I think just about anything could taco for chef Tom! He could make a flip flop good. He has definitely upped my game in the kitchen and on the grill/smoker.

That looked absolutely delicious. The salsa I personally would do without or with way less red chili's. I like a tiny bit of heat. I know I love all the ingredients of the salsa. That Sunnyside up egg was perfection. 😃😍👍

Tom I found sambal which is a DOUBLE smoked jalapeño. Smoked not once, but twice. Better smoky flavors and better texture.
