At 4:50, did you check inside the clamp of the carburetor to ensure that the rubber o-ring was there? sometimes they go missing and that can cause an air leak at the intake.

Extra shout-out to the carburator shot where we could see the jet move when actuating the throttle.
That's a mini cable knarp, basically a small cylinder with a hole and set screw that you can use to set the length of the cable if the cylinder that it came with is not the proper length for your throttle grip.
