Rib eye is a great steak but the subtle flavors get lost in a sandwich and it ends up tasting bland. Eye round is a better cut for steak sandwiches….And very few places in Philly actually use rib eye.

Made cheese steaks as my first meal on my new small griddle tonight. And of course I followed along and overstuffed them, just like you. Wife and kid loved them. , so thank you, Johnny.
Of course the other night after I had seasoned my griddle I told my wife of my plans for smash burgers. She said fine. I texted her from the grocery store where I work and said fine, she then said we are having enchiladas. Nothing like a wife to break your balls. ;-)
Fits right on the table of my Charcoal Summit Grilling Center. Not much room for anything else. Last time a manned a real griddle was at McDonald’s back in the day/early 80s for breakfast and the other shifts. Some things don’t change except I’m more than a few pounds heavier. :-) Love the griddle, but it’s small, but I am def. going to travel with it. Cheers!

You need to take us on a tour of the new house, Johnny! So happy for you, man. Here's my twist on cheese steaks. I like to buy "eye of round' cuts at Costco or Sam's. Then, I will freeze them long enough to make ready for slicer. I dropped a ton of money on a professional slicer back before I retired and I am happy I did. I can quickly slice a bunch of meat paper thin. Then I weigh it out in 3 oz portions, vacuum seal it and freeze. On Cheese Steak night, I pull out a couple of packs, thaw out in water very quickly and BAM! We are off to Philly on the Blackstone! Oh BTW, "eye of round" works really great for jerky too. ...Dang! Ima go pour me a whiskey to celebrate your new house, my friend!

I think Walmart has a seasoned philly steak meat that is frozen. That work pretty good.
I've made a few with just ground beef. You don't chop it up as much. Just kinda spread it out. It is more messy, but as long as the family eats it, it doesn't matter.

Howdy Johnny, Congratulations on the purchase of a house. I like the preshaved Black Angus beef it makes for a quick dinner of cheese steak sandwiches. I have cooked them twice now and they are becoming a family favorite. Perhaps once you get settled in at the new place you can give us a tour of the griddle station/outdoor kitchen. Prefer the provolone cheese over the Gee Whiz is that really cheese. However probably wouldn't refuse it either. Have A Day! ;~)

Congratulations on the new home! I was always a little concerned about your cooking toys being right there by the street like they were. It looks like they are more secure now and you have a lot more privacy for your backyard beer drinking sessions now. 🥳🍻
I recommend that you experiment with using a nicely marbled chuck roast for your cheesesteak sandwiches. I’ve done it and it works great. Cut the meat in 1” to 2” strips, turn it on the side so you’re cutting across the grain and go to town. I’m almost certain that some of the chain restaurants are using chuck for their cheesesteaks because it’s inexpensive, it works and the word “steak” refers to how the meat is cut, not ribeye, NY strip, top sirloin, etc.
Finally, that bread was way too soft which you probably know now. Unless you’ve got a great local independent bakery nearby, the best option is for you to bake the bread yourself. I’ve been doing it for years. It’s satisfying and fun to experiment with. I can send you a recipe that I found on RUclips that might be a great starting point for you if you ever want to try making your own rolls.

62 years living in Philly and never once saw anyone put peppers/ mushrooms or anything else but raw or fried onions on a cheesesteak…but outside of the Philly, everyone seems to do it…weird…anyway….I appreciate your channel as a first time griddle owner…

Congrats on the new house, Johnny! I discovered your channel about two weeks ago and immediately liked the video and subscribed to your channel. I know this is a ymmv situation depending on how high or low your temps are when grilling, but can you give me a rough estimate of how many grilling hours you get out of one propane tank?
Tha is so much for subscribing. Ya it is tricky they say you get 18-20 hours on a medium sized grill. So more burners and a higher setting will make it run out quicker. Also you'll get less gas out of the tank in the winter time.
The propane is liquid and you're burning the gas that releases from the liquid. The colder it is the less gas you get. I hope that's helpful.

Strange you didn’t even out the meat to the ends of the bun. Definitely needed a lot more Velveeta cheese! Why use all the cooked meat at once, just use for leftovers.

I read somewhere that it's best to season cheese teaks at the end and not the beginning like I do with all my other stuff. I think that's what made me forget bc it was a different order. Or I just forgot and that's my excuse lol. I usually just do some salt and pepper on these.
