I can remember watching the bike build off with Indian Larry and Billy Lane and this guy did the leather seat among other things I am sure..but, now I know he was Indian Larry's "secret weapon"...great craftsman.
I like Paul's organic style of building, which takes general ideas that evolve as the bike progresses toward completion. Overly planned motos tend to go stale and take spontaneous changes out of the process. Immediate perception and feel wins the day.
