- today we reverse sear on the pitts and spitts and the blackstone griddle. We did this cook by eye, checking for tenderness and color etc.

Great Vid mate, coming from Aus. Try resting between bringing the steak to temp and the sear. Would like to hear your thoughts.
Hey thanks for stoppin in brotha! How long would you rest them for and why? Cheers brotha
@@NorthTexasBBQAddicts I usually bring them up to about 115f indirect on the kettle, then take them off and rest whilst I add some fully lit coals and get them roaring (about 15 mins) then sear the heck out of them. Works a treat for me. Love ya channel mate
