Shrek as Asgore... So I'm gonna assume that the Underground is Shrek's Swamp, and all fairytale characters have been locked in it. He doesn't want to fight, but he needs a soul to get everyone out of his swamp.
You play as a young donkey lost in the swamp. Flowey would be lord farquad. Toriel is the fairy god mother who paints Shrek to be the evil ruler of the swamp and sends you to defeat him but not before battling you to test your strength. Sans and Papyrus are replaced with Puss in boots, initially determined to stop you but eventually coming to your side. Undyne could be Robin Hood but I'm not sure he was prevelant enough. Alphys and Mettaton are replaced with Fiona and Dragon. Eventually you learn that Shrek is just grumpy and just wants to be left alone and you spare him. Unfortunately, Farquad betrays you killing him and you battle for the final boss.
