You can consider comparing/testing themes on a local site on your machine, which would remove the location's network congestion as a factor. I wasted a lot of time searching for this topic, and TBH, most people are not discussing the performance of WordPress themes. I recently launched my new store, but due to a high bounce rate, I have been unable to convert effectively. However, I have finally found this helpful video. Luckily, my store is not very old, so I will need to change the theme.

For sure some plugins will slow down a site no matter what theme you use, but it all depends on compatibility and the quality of those plugins as well.

The test speeds are very relative to location too. Which is why in my page speed test, astra had faster load speed than oceanwp.
