I love these, they have very nice aroma. It's good that you have the fresh ones because the dried ones have preservatives in them. Did you grow them yourself?

Yes! We grow our Shiitakes outside on logs, mostly oak. That ensures that our dried mushrooms don’t have any preservatives in them.
