+Kerry Scott Tapioca flour, also known as tapioca starch, is a starchy white flour that has a slight sweet flavor to it. Tapioca flour is an alternative to traditional wheat flours and has a variety of uses in baking. The flour is made from the starch extracted from the South American cassava plant (www.bobsredmill.com/tapioca-flour.html)

+Kerry Scott In Thailand we do not use grow wheat, so flour is usually made from rice, potato, or cassava. You only need 1 teaspoon for this recipe as a thickener, so you can easily use regular all-purpose wheat flour and it will work fine.
