How to cut and smoke Pork Belly Burnt Ends | The Bearded Butchers!

    The Bearded Butchers are making meat candy in today's video! (They're actually making pork belly burnt ends). This video takes any other burnt end video you've ever seen up to the next level! The Bearded Butchers will butcher, cut, cube, and cook the burnt ends. This one is field to table! They're so good that they'll make a monkey hug a hound dog 😂.

    Bearded Butcher Pork Belly Burnt Ends Recipe
    1) Cut, season, and place the pork bellies on a rack. Doesn't need to be oiled.
    2) Put the whole rack on your grill at 250F for about 1 hour. ** Charcoal grills work great. You'll have A LOT of fat dripping **
    3) At 1 hour, spray them with a mix of 1:1 apple cider vinegar and apple juice (keeps them from drying out and charring).
    4) At about 2 hours (give or take), check them again. Internal temperature is less important than how they look. Remember, this is basically just really thick bacon. You're looking for nicely rendered fat and a good color.
    5) Transfer the bellies from the rack to a pan that is safe to put back on the grill.
    6) Drizzle your favorite honey over the bellies.
    7) Add a "nice coating" of brown sugar.
    8) We added one full sliced stick of butter to 4.5lb (pre-cooked weight) of pork bellies.
    9) Add some Bearded Butcher BBQ sauce bit.ly/3obPs5B (don't be shy!)
    10) Wrap your pan and place it back on the grill for 1 more hour.
    11) After the hour, remove the pan. Remove the bellies and spread them back out on the wire rack. Place the racks back on the grill for another 10-15 minutes.
    12) Remove from the grill after 10-15 minutes. Serve.

    That is a super nice cutting board. Great information on what to ask for from the butcher and how to prepare your cuts to get to the cut that you want for burnt ends. Then show how to season and grill to get the maximum flavors.

    You all have too much fun and should weigh three hundred pounds by now …. My former father in law introduced me to side meat … same as pork belly yes? We fried it up when we went camping and I never tasted pork that was so tender and flavorful. Thank you for sharing and bringing back great memories with my former family . I divorced their daughter but they still treated me as a son after the dust settled and the smoke cleared . I miss them both and really enjoyed the time spent with them when we went camping .

    Great video's. If you haven't tried a 7-10 day pork belly brine in pastrami pickling spices and curing salt, you need too!! I Brined it, smoked it, sliced it thick and threw it on the flat top. Homemade Russian dressing, Provolone, cold slaw and marbled rye bread. Crazy good.

    Y’all need to try something called rillons. It’s an old French dish that made it to New Orleans. It’s pretty rare down here now, but it absolutely deserves a resurgence. It’s roasted pork belly cubes with a red wine caramel sauce. I’ve only had it once at a place called the meatery here in town. It’s one of the most amazing things you’ve ever had in your life. And nothing says that it couldn’t be smoked. That would absolutely take it to a new level.

    I'm so glad I saved the pork belly from my hog. I used a slab of it to make pulled style pork sandwiches and it turned out amazing. Next slab I pull out will be burnt ends. Thanks for the amazing idea!

      Chuck roast. Brisket point for burn ends. You can use anything.

    When I was young I worked at Smithfield's plant on the belly line for almost 2 years pulled countless thousands of ribs from the belly and never thought of burnt ends! Looks like candy.

    Looks absolutely delicious... only change I would make in the seasoning is to use dark maple syrup instead of the brown sugar and honey, for an even stronger 'candy' flavour. Cheers from BC Canada!

    Have you guys tried smoking a bone in brisket? They are hard to find. I want to try and smoke one. The cook takes alot longer. But I've heard the brisket is the juiciest brisket ever and more favorable.

    I love pork belly burnt ends and your video has given me ways to improve them thanks. Although why is it when i buy pork belly, it always has bone and cartilage running through it. Which makes it difficult to cube without trimming loads of it?

      The recipe turned out exactly as in your video. Instead of sprinkling brown sugar and honey over the burnt ends, I made a sauce using honey in solid form, barbecue sauce and 3/4 of a stick of butter. Once the burnt ends came off the grill and put into an aluminum container, I slathered them with the sauce and sprinkled brown sugar over them. The temperature of my Traeger grill doesn't get as hot as I'd like so I finished the burnt ends at 275 degrees fahrenheight. Absolutely delicious!!!

    Made some this weekend. Used sweet bbq sauce and then alil hot bbq sauce. Nice and sweet at first and then when ur done eating it has alil heat.
