The art style was just better. They got super lazy with the final war arc outside of some parts with Madara but in general everyone looked WAY too "blocky'. Early Shippuden had very fine edges

Sasuke was also out for revenge against his brother. The old west was full of many outlaws and people seeking revenge for those who did them wrong. This theme captures that perfectly with Sasuke.
