It's all personal preference. Like when you start they suggest to have the bottom tighter and looser the more up you go. But as you go you can decide and make small changes every time

If it is going to basically be a bar down shot, then you should stay up. Most of the time, you should go down as it covers more area, plus rebounds wont be as bad. As long as you follow the puck to your glove/blocker on high shots, it shouldn't matter. Just let your instincts decide.
Ryan Deitch You can stay in a low crouch if its a clear high shot but you should never be too straight up because it will be easy to beat you if the player has a deceptive release. You should also always go butterfly if there's any sort of traffic in front or near the shot as it could be deflected.

No you don’t have to go down to your knees, it’s not mandatory some goalies just feel comfortable going to there knees on saves
