I must have seen 100 carvings of this famous dish but this HAS to be the best and more meat has been produced by this method than any other post I've seen !!
The cuttings are actually very thick, there should also be a few cuts that's basically just the crispy skin. And don't worry about the rest of the meat, you are supposed to get a soup out of it, or ask the carving for to go so you can make a soup at home
BBoycire85 meat is good! Means you got your money’s worth haha at least that’s how I see it 😀 yeah I know traditionally it should be crispy skin but it never fills me up.
Now that's obviously done by a professional. They have a very firm grip on the duck, cuts up to the bone, works swiftly and plates the meat so well that it doesn't need a garnish. It's nice to see that the duck isn't dry and falling apart. Satisfaction 1000!
This is definitely not his first time at the rodeo. Amazing skills, I have seen a lot of people carve the Peking Duck, but I have never seen anyone carved it as nicely as he did.

I would also say I enjoy when I get a choice between skin, meat, and combined, this serving sounds like a restaurant no-nonsense style where every piece has meat and skin which is also awesome. Another huge kudos I give is that this video uses some of the most meat from the duck I've ever seen. I've got a playlist that has most carving videos. One of them at a 'Michelin'-rated place that ONLY served the skin into the pancakes for you then stopped the carving and walked away! No idea there.

It was so good. The rest of the meat on the bone was used for fried rice and the bone was made into a soup.

The meat isnt overcooked, hence whitish. You overcook it and it will turn grey.
