You're doing a great job. For the E-brake, I think you want to run the Superduty cables on each side, up forward (usually under the cab) where a bracket accepts both cables, and a short cable goes to the e-brake lever in the cab. This is very common on many vehicles and I'm pretty sure it's how it is on my Tundra.
I installed a hydro hand brake on my 1 Ton Jeep, commonly used by race cars to drift, i have not tested on the trails yet, but I’m quite sure it will work fine

Torn between a tube and plate design or a angled plate bumper. Depends how the wheel wells turn out
