The key fob doubling as basically a remote control for a full size car was what got my mind blown!!! THAT IS SO AWESOME!!!
At 10:33, the lane-departure assistant - it can be turned off simply, by pressing and holding the lane-departure button on the right-hand side of the facia by the steering wheel (next to the boot opener button). This is an easy way of turning the facility off instead of having to go through the menu system as you described.
On my Ioniq 5 that is the Electronic Stability Control button. It deals with traction control, not lane departure assist.
On my USA Ioniq 5, if I push and hold the direction indicator lever when changing lanes, it expects me to change lanes manually. If I push the lever and quickly let it go instead of holding it, the car will usually change lanes itself. I suspect it then knows I want it do handle the lane changing task. The lane changes are quick, more quickly than if I was doing it manually, but by no means unsafe. It just gets it done without lagging.
There is a lane-changing facility on all Ioniq 5's, maybe you had overridden the settings? When cruise control is on, or on standby, the car also takes note of the steering angle so that if the lead car goes straight on and you turn left on the roundabout, the car won't accelerate back up to the set speed until the steering angle has reduced to almost straight-ahead. This avoids the inconvenience of it trying to do 70 around the roundabout...
Ngl Level 2 self driving is about the safe limit (Until level 5).

Level 3 self driving car is to mount a gun turret and install an AI on board then human race extinction here we come. 🤣
