Pizza Making & Spinning Master of London: Master "MASSIMO" Wood Fire Oven Pizzas Italian Street Food

- ✓ You may recall that I uploaded a video of Master Pizza Maker Massimo last year (just before Christmas). So with London lock-down eased for outdoor markets, it seemed a perfect time to revisit Massimo. Since my last visit Massimo now uses only Sourdough for the pizza base.
If by chance you didn't know, Massimo is a Pizza making Master, not any ordinary master but a double dough spinning master, a master who serves up delicious pizzas at his street food stall going by the name of "Pizza Massimo"......I am truly in awe of the skills demonstrated by Master Pizzaiolo Massimo who has perfected his skills over the course of over 20 years; first starting in his home town in Sardinia, Italy.

On this particular day Massimo Pizza was at Queens Park Sunday Farmers Market in London and once again his wonderful mobile pizzeria with a wood fire oven had that freshly baked smell emanating from the oven started making me hungry.
On the day of my visit I ordered:
* Margherita Pizzas topped with Mushrooms and a drizzle of Garlic Oil
I also ordered the "Veggi" a Vegetarian option which was made with the following toppings:
* Homemade Tomato Sauce.
* Baby Spinach.
* Buffalo Mozzarella.
* Mushrooms.
* Red onions.
* Roasted Peppers
* "Spaghetti" Courgette
* Fresh Basil Leaves
* A drizzle of Garlic Oil
* A drizzle of Chilli Oil.
Once a customer places an order; Massimo quickly and skillfully hand spins and stretches the dough and then it gets cooked in the wood oven (which Massimo has had specially imported from Italy).
What raises the pizza to a higher taste level is the BBQ style smokiness flavour imparted by the wood fired oven.
The actual pizza cooks very quickly, because the wood oven reaches a "sizzling" temperature of around 300 to 400 degrees centigrade, creating a deliciously smokey flavoured pizza.

This video was only my 3rd time going out to record since March.
These are the guys that need to "survive and still be there" once it gets back to normal. Massimo is genuinely a lovely guy; providing that "magical something" that Pizza Express, Pizza Hut, Dominos etc.. will never be able to provide.
Can't wait for this surreal time to end (hopefully this moment in time is giving people lots of time to think and learn from Mother Nature).

I understand this "rustic"style pizza, but I hate it when they cant just spend 5 more seconds distributing the toppings evenly... so annoying.
if the toppings are put on perfect the pizza will look like dominos pizza.real pizza is made the way you see it in the video.each bite should be different to the last.its all about how the dough is made,handled and cooked.just my opinion.
