Malida (Choori)
Recipe in English:
Ingredients:
-Atta (Whole wheat flour) 1 & ½ Cups
-Ghee 2 tbs
-Namak (Salt) ¼ tsp
-Pani (Water) ½ Cup or as required
-Ghee for frying
-Cheeni (Sugar) ¼ Cup or to taste
-Asli ghee (Pure clarified butter) 4 tbs
-Badam (Almonds) chopped 10-15
-Kaju (Cashew nuts) chopped 10-15
-Pista (Pistachio) chopped 10-15
-Elaichi powder (Cardamom powder) 1 tsp
Directions:
For Dough:
-In whole wheat flour,add ghee,salt and mix well.
-Gradually add water,mix well and knead until dough is formed,cover and let it rest for 10 minutes.
-Take a small dough and make a ball,sprinkle dry wheat flour and roll out with the help of rolling pin.
-Heat griddle,place rolled dough and cook on medium low flame from both sides and press gently.
-Apply ghee and fry from both sides,set aside and let it cool.
-In mixer,add sugar and grind to make a fine powder and set aside.
-In chopper,first break the 2-parathas in small pieces and chop well & set aside.
-In wok,add pure clarified butter and let it melt,add almonds,cashew nuts,pistachio and fry for 1-2 minutes.
-Now add paratha crumbled mixture and cardamom powder,mix well and cook on medium low flame for 4-5 minutes.
-Switch off the flame,add powdered sugar and toss it all together for few minutes till incorporated.
-Transfer into a serving bowl & serve.
Tip:
-You can also use leftover paratha’s (flatbread).

-Thora thora ker ka pani shamil karein aur ghond ker dough tayyar ker lein aur dhak ker 10 minutes kliya rakh dein.
-Chota dough lein aur ball bana lein,atta chirak ker rolling pin ki madad sa bail lein.
-Tawa garam karein aur rolled dough rakh dein aur halki darmiyani ancch per dono sides sa paka lein aur halkay sa press ker lein.
-Ghee laga lein aur dono sides sa fry ker lein aur side per rakh ker thanda ker lein.
-Mixer mein cheeni dal dein aur grind ker ka powder tayyar ker lein aur side per rakh dein.
-Chopper mein 2-parathay haath sa tor ker dal dein aur ache tarhan chop ker lein & side per rakh dein.
-Karhai mein asli ghee dal ker melt karein,badam,kaju aur pista dal dein aur 1-2 minutes kliya fry ker lein.
-Ab paratha crumbled mixture aur elaichi powder dal ker ache tarhan mix karein aur halki darmiyani ancch per 4-5 minutes kliya paka lein.
-Chulha bund ker dein aur pissi hoye cheeni dal dein aur kuch minutes kliya ache tarhan toss ker lein.
-Serving bowl mein nikal lein & serve karein.
Tip:
-Leftover parathay (flatbread) bhi use ker saktay han.
This recipe reminded me of childhood days when my mum used to make these for us. I lost her but her memories will stay with me always. ❤️

My husband loves this recipe. It reminded him of his childhood days when his relatives from the village would bring sacks full of choori. I make a very rich version of this where I add eggs, milk, sugar, desi ghee to the whole wheat flour and make thick chapatis from this and bake it in the oven until they fluff up like baloons. It gives it a lovely cake like taste and then add in the remaining sugar, nuts and dried fruit. Just love eating it cold from the fridge with a hot cup of tea! My wonderful mum-in-law also adds pure jowar/makai atta to the mix as well.

⚅YIELD: 5 rotis (large size, thick and soft)⚅
🔹️INGREDIENTS🔹️
🔅Churi Roti🔅
💠If you have jowar/makai atta use this measurement for the ratio of flours💠
Whole wheat flour: 3 cups
Jowar/Makai flour: 1 cup
💠If you don't have jowar/makai atta use this measurement for the ratio of flours. Everything else stays the same.💠
Whole wheat flour: 4 cups
Eggs: 2
Desi ghee: 4 Tbsp.
Milk: 1.5 cups
Water: 4 Tbsp.
Salt: 1/2 Tsp.
Sugar: 3 Tbsp.
🔅Final Stage🔅
Desi ghee: 4 Tbsp. (optional)
Almonds: 1 cup (roughly chopped)
Walnuts: 1 cup (roughly chopped)
Pistachios: 1 cup (whole)
Churi Roti: 5 pieces (medium crumbs)
Cardamom (powder): 2 Tsp.
Sugar: 1/2 cup
🔹️METHOD🔹️
1) In a bowl add in your flours, egg, desi ghee, milk and combine until a slightly sticky dough forms. Then add in your 4 Tbsp. of water and knead again.
2) Cover the bowl and rest the dough on your kitchen counter for 30 mins. After 30 mins wet your hands again slightly and knead the dough again until it becomes smooth and the stickiness is gone.
3) Divide the dough into 5 equal balls. Roll them into large circles but not too large, you want them to still stay thicker than your normal roti at dinner time.
4) If you are fortunate enough to have a tandoor you can make them in that. If you don't have a tandoor you can bake them in your oven. The next step is in regards to baking them.
5) Start pre-heating your oven to 375°F/190°C.
6) After you have rolled out your dough ball cook both sides on a flat pan for a few 20 seconds each. This helps make it slightly firm so that it's easy to place directly on your oven grills. I cook all the churi rotis on the flat pan first, then depending on the space in my oven bake in batches of 2 or 3 at a time for 15-20 mins.
7) Place 2 or 3 churi rotis in your oven at 375°F/190°C for 15-20 minutes until they become slightly charred and fluff up like balloons. Once cooked take them out of the oven and let them cool for 20 minutes. Next step is a bit tedious but it was the only way to find a balance between the perfect texture instead of a fine powder.
8) Cut each roti into 15 long strips, then cut the strips into medium cubes and pulse in a food processor in small batches for 15 seconds. Place the processed churi in a large bowl.
9) OPTIONAL: In a pan on medium heat sauté your chopped, whole nuts and dried fruits in desi ghee for a total of 2 minutes only. Turn of the flame and add the nuts and dried fruits to the bowl with churi and add in your sugar. Mix everything in the bowl until thoroughly combined.
10) If you do not want to saute the nuts and stick to the absolute classic, original, authentic recipe simply coarsely chop the nuts and mix them straight in the crumbled churi roti.
11) Store in the fridge for up to 1 week.
✳NOTES✳
🔆Salt🔆
1) I use Pink Himalayan salt in cooking which has a milder taste than table salt, so I always require more quantity of it in my recipes.
2) If you are using regular table salt, always start the recipe with 1/4th Tsp. of salt and slowly add more as you taste the recipe along the way.
🔆Dough🔆
1) The dough for churi needs to be cooked immediately after it is formed. If you refrigerate it to use for the next day it will become chewy after we form our flatbreads.
🔆Roti vs Paratha🔆
1) A lot of people make parathas out of the churi dough but the authentic version is made with thick rotis baked in either a tandoor or an oven.
🔆Plain vs Sautéed🔆
1) There is another version of this recipe made in villages up north where they do not fry any of the nuts or rotis ingredients. After the rotis are cooked, they are crumbled to tiny pieces and tossed in nuts, dried fruit and slightly coarse sugar granules. Then they are packed in huge sacks and sent to families in the city where some prefer to eat it cold straight out of the fridge and some prefer to sauté the churi in warm desi ghee before serving.
🔆Storage🔆
1) If you want to store it outside the fridge, skip the sautéing of nuts and dried fruit in desi ghee and add everything dry to the churi mixture. This is a great way to store in large bags and for long transport times.
🔆Serving🔆
1) You then have the option of either eating churi dry and cold or sautéed in desi ghee before serving. My preference is to enjoy it dry, cold with a hot cup of tea ❤
